My brother and SIL are coming for Easter dinner and I'm working on my menu. Since there has been talk of a Chocolate Lasagna Cake in the Weight Loss thread, it piqued my interest and I thought I'd make something like that for our Easter dessert. Actually, it's a Chocolate Peanut Butter Lasagna Cake, to be exact. And then make a lemonade cake, too.

I asked my brother if he would like to have a lemonade cake and a Chocolate Peanut Butter Lasagna Cake for dessert. He texted me back and said, "Where the
is the white coconut cake? Do we only get white coconut cake for Christmas now? I want white coconut cake!!!!!" I texted him back and said that I'd order the blasted cake for him. And got this: "OK. Love you!"

For those who haven't been around long, a 3-layer white coconut cake is The Cake for my sister, my brother and me. We always have it as one of our Christmas desserts and I usually have it for Easter, too. I wasn't going to get one this year because well, quite honestly, then I eat the blasted thing. The omission was definitely noticed by my brother and has been rectified....I ordered the blasted cake a couple minutes ago. Must keep the natives happy! I love my clan....I just love my clan.

I really thought about the blackout cake; I've been intrigued ever since you posted about it, @Kat0121. Such a chocolate hound I am.

But it will be lemon. Rick's mother specifically asked for the lemonade cake; she says she's really hungry for something lemon.

I can testify that those King Arthur lemon squares are decadently good.

So are these: http://www.foodnetwork.com/recipes/ina-garten/lemon-cake-recipe.html I make the recipe in miniature loaf pans and tuck them into my Christmas cookie baskets to give to friends. They are just wonderful. Between the cake, then the glaze, and then the frosting, well, if you really like lemon, you'll think you're in lemon heaven!
