  • Our breakfast routine, then I hit the treadmill for 2.75 miles
  • I remembered to mail those bills out on my way to work this morning
  • We might (might) hit the mall tonight. We need some kind of comforter/blanket that looks summery for our bed. I don't want to spend a ton of money on it because the cats' claws will just wreck it sooner or later. Right now, we're only using a sheet and it's a bit chilly by morning. Don't want something really heavy, but just a bit of cover to add a bit of warmth for the coolish early mornings when the windows are open. Don't know if we'll make it down there or not. If we do, I also need to go to Staples. I opened my last package of ink cartridges for the printer, so need to replenish my stock. I have a $10 reward coupon to put toward the ink, plus I have another coupon for 25% extra reward points for the purchase. Both expire at the end of June and ink is on sale right now.
  • I need to wash pillow cases. Mollipop anointed Rick's pillowcase with a hairball during the night. Ick. So I'll throw them all into a small load.

   tidy up Artie litter box bathroom--he made a mess with litter last night. high kicker 

     put some stuff in store room.

We did make it to the mall last night. Rick got a quick hair trim and then we checked out bedspreads and comforters. We found a grey "down-alternative" comforter that was only $40 any size, so took a King. We have a Queen bed, but when the cats all sack out in the bed, there's no covers for us. A King will give us some extra cover; that's the plan anyway. 
  • Breakfast for the kids, then I hit the treadmill for 3 miles. Scooped the boxes, made the bed, all that good stuff
  • Three loads of laundry, although I'm going to try to get all the colored stuff into one load to cut it down to two loads (I don't know how well that will work)
  • Trash night
  • It's an exercise night

regular morning routine, done quickly

Taking Artie to the Vet's this morning.

have to make a salad for supper

Today is a gym day. Hate to go in the afternoon, but I will have to.

home to shower, 

Eat supper

That may be all.

I will grab a protein bar on the way home from the Vet; before the gym

Yesterday, I could not accomplish much because the traffic was horrendous!! You would think it was the Friday before the long week-end, but no! It was a Tuesday!! Man, where did all the traffic come from...

Yesterday, I could only do regular morning stuff, Write out bills, Post office, Bank, Hair Dressers to pick up shampoo, and a million, yes a million phone

calls!!  Those calls took up a lot of time!   

Most of the time was taken up sitting in traffic!!

the highlights of today have been -- moved a jar of raw cat food to the fridge to thaw, made a batch of vanilla pudding, grated some extra sharp cheddar cheese, washed the dishes, scooped the litter boxes, and took out the trash. i also had two small packages delivered today.

  • I had to run a very small load of laundry this morning. Around 4:00, we woke up to the sound of Tabby gagging on a hairball. She brought the hairball up while she was still sitting on my shorts on the chair. Hairball hit both pairs of shorts, my socks, and the chair pillow. Then she jumped to the floor and brought up another hairball. Cleaned that up, cleaned the pillow and the clothing and then took the clothing down to the washer. Pillow is cleaned and is in the bathtub.....I'll run that thru the washer tonight.
  • Normal breakfast routine, followed by 3 miles on the treadmill, etc.
  • Went through my stash of cookbooks again and got another 2 totes to take over to the library, so am doing that today during lunch. Today's the last day the library will accept books until the beginning of August and I want to get them out of the house. The library is having their huge book sale mid-July, so I'd like to get the cookbooks there. They usually put nice cookbooks in a special place and they charge more money for them. I know the ladies were really tickled to get the last batch I brought in.
  • After the library run, I'm hitting our local natural food store to get some turmeric/curcumin tablets. I used to take them a couple years ago, but stopped buying them. Well, Rick and I talked about it and I think the tablets did help with inflammation; I think I had fewer migraines and they weren't as severe while I was taking the tablets. I'm going to try them again, see if they might help with the inflammation of the piriformis muscle that I'm having trouble with right now. It's worth a shot, IMO.
  • Not all that much going on tonight. Maybe I can get an early bedtime.
Unfortunately, the repair guru hasn't called this week about the circuit board for my stove. I'm going through some serious baking withdrawal!

today's highlights were baking the beef burrito casserole, washing the dishes, scooping litter boxes. i'll work on the budget a bit this afternoon, then watch a tv show or two...maybe a movie.

I don't suppose you'd care to share the recipe for that, would you? That sounds like something DD would love. 

my highlights were:

Getting out of bed and ready for work

Feeding the kids their breakfast with Miss Sophie on the kitchen counter inspecting each dish as I added food to it. I guess she is supervising quality control now. She just started doing this.

Going to Petsmart later to pick up an online order and then Yankee Candle after. I have a coupon for a free large candle with any $10 purchase

no problem! it's a very adaptable recipe, many times i'll add this or that that i have sitting in the fridge that needs using up. you can use a different kind of cheese, shredded or probably cheese slices. i use rice, but you don't have to. i've never used ground chicken or turkey in this recipe, but i imagine that would work well too. you can also halve this recipe, and make an 8 x 8 inch pan of it.

here you go --

Beef Burrito Casserole

small tortillas, either corn or flour  (i use whichever i have on hand)

refried beans  (i use one 15 oz can, when making a 9 x 13 pan)

cooked rice

1-2 lbs ground beef

1-2 packets of taco seasoning mix

salsa  (i use one 24 oz jar of medium salsa, when making a 9 x 13 pan)

mild or sharp cheddar cheese shred  (i use about 1 1/2 cups, when making a 9 x 13 pan)

enchilada sauce, optional  (but a very tasty addition)

jalapenos, optional  (i sometimes add some sliced jalapenos, the kind you buy in a jar)

brown the ground beef, and drain off the grease. follow the taco seasoning packet instructions to add the seasoning mix to the browned ground beef.

preheat the oven to 350 degrees F. grease the baking dish, i use butter. i use a glass baking dish, because i find it much easier to wash. i'm sure you know but your DD might not, to never put a hot glass baking dish into the fridge...it'll crack or shatter.

you'll make layers for this casserole -- i prefer to make three layers.

if using enchilada sauce (i just use it on the bottom of the baking dish and on the top of the casserole), spread a thin layer of it on the bottom of the baking dish. lay the tortillas over the enchilada sauce, they can overlap somewhat, and you can use halves of the tortillas as needed too. spread almost half the refried beans over the tortillas -- i use the back of a serving spoon to do this. spread almost half your cooked rice over the refried beans, followed by almost half the beef with taco seasoning, almost half the salsa, and 1/3rd of the cheddar cheese shred. if you're adding jalapenos or other additional ingredients, just fit them in as a layer where you want to. repeat the layers twice more, with the top layer having smaller amounts of everything over the tortillas except the cheese. if using enchilada sauce, add to the top layer before the cheese.

bake at 350 degrees F for about 25 minutes. you're really just letting the cheese melt and everything get nice and hot.

since i use a glass baking dish, i transfer the casserole over to plastic containers with lids almost immediately after it comes out of the oven, then it goes into the fridge. i've never frozen it, but i think it should do fine being frozen/thawed/reheated. i just reheat servings in the microwave.

today i was thinking about adding some sweet bread & butter pickle slices to it, but will need to think about that. i think they'd work well if i made the casserole a cheeseburger casserole, and didn't add the enchilada sauce and possibly the salsa...or maybe a mild salsa. just my continuing love affair with sweet bread & butter pickles......

adding to my 'Name three things' -- looked through my 3 bread machine cookbooks as well as did some searching online, for recipes using 7-grain (cereal) mix in bread machine breads. i think i've found a recipe that i want to try now. i'll probably make a loaf over the weekend, and see how it turns out.

@mickNsnicks2mom, I'd be interested in the recipe, too, please.

And the stove is to be fixed tomorrow (Friday)! He called me today to say that the circuit board came in, but the locking latch did not. He thinks the problem is the circuit board, though, and he feels that, once the new board is installed, the oven should work properly. The new latch is simply a precaution, he hopes.

I hope he's right because I'm making snickerdoodle and peanut butter chocolate chunkers dough tonight to chill in the fridge overnight. And I will need to bake them tomorrow afternoon! I'm also making some fluted lemon cakes with the little lemon wafers from King Arthur for the picnic on Saturday. So tomorrow will be a much-needed baking day. I haven't baked in a long time, it seems.

I'm off work today 
, took a vacation day since the repair guru is coming to fix the oven. It's always nice to have a day off work, but we have a three-day weekend coming up and now I have four days off work in a row! Life is good!
  • Doughs for the cookies are made and have been chilling overnight in the fridge. Will bake them sometime today (I hope)
  • Our breakfast routine. Since I'm not working and since Rick had to go into work early, I emptied out the dishwasher before going down to hit the treadmill for 3 miles. Came back upstairs, scooped the boxes and made the bed.
  • I have to get some ground beef and a package of bacon out of the freezer to make my crock pot beans tomorrow for the picnic
  • A quick run to the grocery store tonight for a few things
  • Vacuum, dust (well, more like a quick Swiffer), scoop the boxes, all that good stuff
  • Tonight is an exercise night
We have had so little rain that the only things growing in the yard are the buckhorn weeds. We're not mowing the yard this weekend....it's just way too dry. The buckhorns should be mowed off, but the grass looks horrible. We desperately need some rain. We are glad we didn't do the garden this year.

I just located this thread=So nice to read people's routines and things.

Winchester=can you post that recipe for crockpot beans? I bet that would taste good on corn chips n salsa n sour cream. Its going to be hot this weekend-so if I can cook something in the crockpot rather than the oven would be fantastic.

Working today=everyone took the day off so no one is here. We call it an inhouse vacation day due to no management and no big wigs walking around bothering people-the usual drones getting their noses in stuff they should not be getting involved in.

The goal tonight is :

Gym

plug in AC and move air cleaner to another part of the room but I have to move some items because I don't want it in the middle of the walk way. I wish they put more outlets along the inner walls under the breakfast nook. I am afraid to plug the AC in the same outlet with the air purifier plus the tv is plugged into it-just such a pain to figure out how to put the air cleaner in the room so its not blocking egress or blocked from getting fresh air. This whirlpool whisper really does a good job of pulling dust and dirt out of the air. Especially now with the dry air and no rain.

Then figure out weekend stuff for food. I could live off salsa and chips but I kind of want to plan ahead..so food and activities for the weekend...the crowds really bother us-so not sure where to go where there is NO ONE.

It's the seventh post down on the page. They are good. You brown the bacon and the ground beef, saute the onions, drain the beans. Then it's just matter of combining everything in a (huge) crock pot. Everybody seems to like them around here.

I think I will get the ingredients to assemble tomorrow afternoon. We are so sick of Chicken or Jon is-I can eat chicken every day. We already had hamburgers and hotdogs last week. This week was chicken. I want to do steaks but that is only 2 or 3 meals and not enough for left overs-I will eat the WHOLE 1lb steak! That's how much I LOVE grilled steak-oh and make it medium so it has juices=I make plain rice-and put the steaks on the rice and its soooo good! Can you tell I am hungry?

Tonight I need to rethink what I am doing-the floors are getting gross=I really need to vacuum. I have put it off because its so hot and sticky that the vacuum blows out hot air and just so miserable. Not to mention the kats keep dragging in dirt and debris from the gardens. I really need to do some cleaning soon.

I like this idea of naming 3 things-maybe this will help me keep track better of things that need to be done.

 tomorrow will be busy with yard sales in the morning then breakfast then watering the garden. I haven't thought ahead for Sunday. I hope we can get to the lake and go swimming this weekend.  I have forgotten how much I love swimming. But we really dislike crowds. Hope this isn't too wordy. Trying to keep it short and simple.

  • Breakfast stuff and 3 miles on the treadmill this morning, scooped the boxes, etc.
  • Errands: banking, grocery store, Target, etc. I need some broccoli and a small head of cauliflower to add to my veggie tray for tonight. A stop at the meat market for two Delmonicos for Monday's dinner. Rick's mom is coming for dinner on Monday and we're going to grill the steaks. Rick and I are splitting one steak and the other is for his mother. But we need to get them today.
  • We're taking some cookies in for Rick's mom this morning (she called us last night to finalize plans for Monday. She asked me if I had done any baking lately as she knew that the oven had been on the fritz and was happy when we told her we'd stop in this morning with some cookies. The woman has a serious sweet tooth. 
     )
  • Will need to start on my crock pot beans around 9:30 or so this morning
Other than that, I don't plan on doing much today.

today is planning on being a cleaning day. 

I cannot list what I am doing, because it is an: as I go along type of day!!!

Not planning on leaving the apartment at all. I hate to be on the road for holiday week ends. 

I am planning on dusting, vacuuming, washing clothes and putting away...and what else comes along. Also hoping I can sit outside for a bit, and enjoy the weather.

Today, up early, yes, early--5am for church.. Artie was about to wake me up...

Church,

Wash some towels

go to shelter..

that is it.. oh, and watch fireworks.
