Tonight is leftover meatloaf. In sandwiches. Love meatloaf sandwiches! 
 With a salad on the side.

Nope.  I'm diabetic, and tests indicate that it may have originated in my liver; I'm totally off of both caffeine and alcohol.  I'm also sensitive to milk protein, which makes commercial eggnog totally impossible.

It turns out that unsweetened Diamond Breeze Almond Cashew milk has a very creamy texture, and only one gram of carbs per 8 ounce glass.  I add a few squirts of the really good stevia to it, mixed 50/50 with unsweetened vanilla extract, and it tastes almost exactly like eggnog, with the added advantage that it's available whenever I want it, not just at Thanksgiving and Christmas.  The really good stevia, BTW, is Now Better Stevia (http://www.nowfoods.com/Foods/Better-Stevia/).  It doesn't have a nasty aftertaste like that Truvia stuff they sell in the grocery store.  I buy mine at Vitamin Cottage.

We are having Hasselback Chicken tonight for dinner (courtesy of Mrs. B
). The store has these humongous chicken breasts on sale last night. One will easily feed both Rick and me. And I'm thinking of making my vegetable rice as a side dish. Kind of like a rice pilaf, I guess, but I add chopped onions and peppers, chopped carrots, sometimes a cup or so of peas, sometime some snow peas, sometimes some chopped broccoli. Whatever I'm in the mood to throw into the mix.

I'm making tortellini and chicken casserole with rose sauce tonight. There's one my kids really love from the grocery store so I'm trying to duplicate it tonight. The grocery store one is like 75% chicken which ends up being way too much chicken and not enough pasta.

I'm making tortellini and chicken casserole with rose sauce tonight. There's one my kids really love from the grocery store so I'm trying to duplicate it tonight. The grocery store one is like 75% chicken which ends up being way too much chicken and not enough pasta.
We really liked it. But I printed out the recipe and then lost it. Instead of printing another copy, I winged it. And I used frozen spinach that I thawed and squeezed dry. It's good and I liked it. Rick even said it was pretty good, considering it was chicken (he's not a big chicken fan).

Thank you for the recipe and I'll print it out again. It's a keeper.

Tonight's dinner will be turkey kielbasa with whole wheat pasta, onions, broccoli, and chopped tomatoes. With a wee sprinkle of freshly grated parm on top. And a couple of the Irish Soda Bread Muffins.
