Chili sounds really good!  I usually just throw stuff together and use a packet of McCormick seasoning.  We do mild and low sodium here.  I love to put it in the crock pot and just let it marinate.  Lately we use ground turkey in place of ground beef a lot.  To my surprise; my kids are eating it way better than things with ground beef!  And they aren't normally big chicken fans!  Go figure!

Tonight we are having stir fry.  I made a teryaki marinade for the meat and I'll cook the extra sauce so it can be used for the rest of the dish.  I got fresh carrots, fresh sugar snap peas, and a can of water chestnuts to stir fry.  I have a stir fry recipe that use use angel hair pasta with; but for this I'll probably do white rice.  I couldn't get the rest of the house on the brown rice train.

I made a big pot of my Dad's chili (otherwise known as, Papa's Chili). It's from a recipe he got from a cook in WWII and OMG! It is the best ...and ONLY chili I will eat!
The funny thing is... Just as I was adding the spices and started stirring it, my phone rang. I saw who it was and answered, "Man! You have a nose like a blood hound!" and my sister (who was calling) said, "I'm on my way!" and hung up! LOL  Thirty minutes later she was walking through my door! Since the word got out, my daughter and her roommate stopped by (she was kind enough to bring her own Tupperware for 'carry out'), and my brother is stopping by on his way home from work tomorrow to get his share!
May I.have the recipe or is it a family secret?

I had breast of chicken cooked in a teriyaki and spicey whatever. Mashed potatoes and and salad.
Not bad at all. The service wasn't anything to write home about.

Whatever Dear Richard wants to make for dinner is OK with me. We have vegetable soup in the fridge. We have some pasta sauce in the fridge. And there is pizza in the freezer. All quick and easy. I have a hair appt tonight and won't get home until later on.
Umm, none of the above!
Rick was rummaging around in the upstairs freezer and found that other quiche (from our brunch on Christmas morning). He heated that up and that was our dinner last night. He also asked me to make it again. He really likes it! (I'll have to post it in The Recipe Section)

So I'm thinking tonight we shall have the vegetable soup with some cornbread.

Turkey tonight. I'm not stuffing it but will make some corn, mashed potatoes and gravy with it.

I took 1-1/2 pounds of ground beef out of the freezer yesterday to thaw in the fridge. I'm thinking bbq meatloaf for dinner tonight, with some hasselback potatoes and roasted butternut squash.

That sounds really good, Pam! But, I will end up eating Chili tonight since I still have some left over. I hate freezing it - it never tastes the same.

Giordano's pizza! Didn't do deep dish today though. Thin crust, mushroom and green olive, light sauce, extra cheese, pie cut. Got it about 2:30pm actually because there was no way I was gonna go out this evening to go get it. And EVERYONE will be getting delivery.

We have to eat heart healthy now that my mom was diagnosed with congestive heart failure, but she's in the clear but we still have to eat as little sodium as possible!

Last night was baked chicken and I had half of a granny smith apple.

Tonight was lean ground beef hamburgers with no bun for all 3 of us. I had mine with cheese only because I prefer cheese. And had sauteed mushrooms, half of a banana and baby carrots with homemade ranch.

For dessert is chocolate chip cookie dough ice cream, maybe not heart healthy but it's been a stressful week and I need ice cream. I'm just glad to have my mom home where she belongs! She was in the hospital

Monday til yesterday afternoon. Just glad she is going to be ok!

I'm glad your mom is going to be OK, Miagi's Mommy.

Well, tonight's dinner is going to be beef pot pie. Made with sourdough!

My BIL found a recipe for the rolled-out pot pie squares that are made with sourdough starter. He tried it out, pronounced it "wonderful stuff" and is giving me a hunk of the leftover dough that I can roll out and cut for dinner tonight. I can't wait to try it out!

(He said it's a stickier dough that what I'm probably used to and to not skimp on the flour.)

I have to say that sourdough pot pie was delicious! It did have a bit of sourdough tang to it, but not overly so and it was quite good. He texted me the recipe last night and I'll be making it myself. It's a keeper and it's something else I can do with my sourdough starter discards. I didn't find the dough sticky at all; I'm thinking that was because he had wrapped it in waxed paper and put it in the fridge for a day....gave it some time to firm up a bit. I only used 2 tablespoons of flour to roll the dough out. Good stuff.

Tonight is a recipe for crock pot beef stew that I wanted to try. Steak seasoning and Italian seasoning rubbed into the meat. Chunks of potatoes and carrots and sliced onions (I added some cloves of garlic, too) thrown into the crock pot with the beef placed on top. Beef stock (homemade from the freezer). Cook on low for 9 hours, then pour the juices off to make a bit of gravy. While I'm making the gravy, I'll throw some frozen peas in to the mix and continue cooking from the crock pot. Til the gravy is finished, the peas should be cooked, too. Rick saw me putting it together this morning and he's already hoping for leftovers! Leftover beef stew is delicious, esp over baking powder biscuits, fresh from the oven.

And then we need to get back off the beef kick. Saturday night was meat loaf, Sunday night was the beef pot pie, and tonight is beef stew. We normally don't eat that much beef in two months! But I had seen this gorgeous chuck roast at the butcher shop; it was just beautiful. So I bought it and figured that if we could get 3 meals out of it, it would be worth it. And it was.
