I found the pork in the freezer, so I stuck it in the fridge to thaw a bit. 

We are having sweet and sour pork for dinner tonight. Dessert is a mile-high lemon meringue pie. I am making that later on this morning. I've been wanting lemon meringue now for a while.

Mom's taking some chili she had in the freezer, adding corn and black beans to it, and turning it into southwestern chili!

Fried sausages with fried eggs sunny side up and a little fried onion and chips done in the microwave. Quite tasty.

I had some goetta and eggs over easy with toast. I just wasn't in the mood to cook a big dinner.

I find a recipe for a cabbage type salad with beans, corn, avocado and chicken that I am going to try.

I took a pound of ground beef out of the freezer this morning. And have no idea what I'm going to do with it. There are some 100-calorie buns in the pantry, so I'm thinking of throwing together some sloppy joes. Maybe with a tossed salad. Or I could throw a quick pan of Yorkshire beef together. We'll see.

Thinking I will take a leftover salisbury steak out of the freezer, for supper. I will roast a sweet potato--that will be my meal. 

However, overtime I plan something, my plans change...so who knows what I will have!

As I had said in a different post---guess I am confuuuused!!!!

I changed my mind and had the butcher smash down a chicken cutlet; lightly dusted with four, dipped in egg and then dredged with seasoned bread crumbs....fried in corn oil...(mu mom used it--so it is comfort food)

kind of like an easy, fast fried chicken....so good...

I had a roasted sweet potato and some corn....I just love corn...

I have  tendency to cook comfort food.....

Have enough for one more day of leftovers....

Fettuccine with shrimps. Nowhere near as good as last time I had it. Was completely saltless and no matter how much I added it was still tasteless. It was very creamy though and the shrimps were OK but it also came lukewarm but I felt so unwell I couldn't be bothered to send it back to be microwaved.

How do you make Yorkshire beef with ground beef?
Judy, Yorkshire Beef is a very old Betty Crocker/Gold Medal Flour recipe. Basically, it's sauteed ground beef with onions and green peppers with tomatoes and herbs. That's all mixed together in a casserole dish. Make a batter from eggs, milk, flour, and salt (like Yorkshire pudding, kind of). Pour the batter over the beef mixture and bake. The batter puffs up around the beef mixture in the oven. Like a meal in a dish thing, I guess. I always add vegetables to it. It's not bad, but it's not gourmet dining by any stretch. For some reason, Dear Richard really likes Yorkshire Beef. 

Chicken fajitas are on the menu for tonight. I have some small corn tortillas in the pantry and I thawed a large chicken breast last night while making last night's dinner. So this morning, I put the breast into a marinade.
