Breakfast for supper tonight. Some kind of frittata with English muffins. Some crisp bacon. And even some OJ.

I took a small chuck roast out of the freezer last night and am making beef stew in the pressure cooker tonight.

I'm attempting to make pulled chicken in the slow cooker using chicken breasts.  We are pretty chicken'ed  out and I needed to use them up.  Hopefully the BBQ taste will convince my kids to eat happily.

The ex brought home the most disgusting Chinese food I've ever tasted. Watery, sweet, sweet potato soup ugh. Chicken, very little, with noodles a few slices of red pepper and it tasted tomatoey. Yuk.

What veggies do you put in?
We didn't have beef stew last night. Some people called about picking up some furniture they had purchased at the sale, so we went up to the house to help them get the furniture out. That took longer than expected.

And then we went to Verizon so I could get a new cell phone. And that took forever. So last night's dinner was ham done on the indoor grill with a couple pierogies and some green beans.

Rick has a meeting tonight about signing up for Medicare. Til he gets home from that, I should have the beef stew ready for us to have dinner. I brought the pressure cooker up from the basement this morning. While that is cooking, I'm going wrap that other loaf of Pane Siciliano that is the freezer in foil and heat that in the oven. And Rick has asked me to make some peanut butter and chocolate marbled brownies; he has a serious chocolate thing going right now. That doesn't happen very often. I'm going to serve the brownies with some fresh strawberries.

Judy, I saute chopped onions and celery when I brown the chuck roast. I season the chuck roast with a seasoning blend that I make myself and then store in the spice cabinet. I add potatoes and carrots in the beginning. When the time is finished, I release the steam, open the lid, remove some of the juices, add some mushrooms and some peas. Put the lid back on and set the cooker for another five minutes. While the peas and mushrooms are cooking, I thicken the juices just a bit. Not counting the time it takes for the pressure cooker to come up to pressure, it takes about an hour (give or take a couple minutes) for us to have a nice beef stew meal.

I have a seasoned turkey breast in the freezer. I think I will thaw that and make mashed potatoes, maybe have some green peas with it. Honestly, I have had to cook so much for other people that my meat supply in the freezer is low. I have to go stock up some time this week on meat again.

I put ingredients in the slow cooker for french dip sandwiches. I needed something easy because I have to take my son to the doctor this afternoon and won't be home until dinner time. I will probably grab some store bought potato wedges to go with it.
