We don't always have soup but when it's really cold we do.... I really like homemade chicken and noodle soup with homemade biscuits or dumplings. It's filling. I sometimes eat ramen when it's cold but

I always use a little bit of the seasoning or it's too salty. But it's not my favorite thing ever.. it's just something to warm me up if we don't have stuff for soup. :) We always have ramen in the pantry if we need a quick meal or I eat it for lunch when it's cold out.

Either chicken corn chowder or a red wine beef stew.
Or my moms Dutch noodles, it's homade chicken broth using the reserved chicken with potatoes, onions, carrots, celery and homemade noodles.

My favorite soup is tomato. Summer, spring, fall and winter. Safeway really has good tomato soup in their deli although it is a little spicy for me I still eat it. I also like chili.

Thinking about good cold weather dishes, here is a link to the best whole-chicken-in-a-crockpot recipe I've ever made or tasted. It is super easy and makes the house smell wonderful. The crockpot fills with juices as the chicken cooks, perfect for delicious gravy. No exaggeration, it's the best chicken gravy ever! :nod:

A couple notes:

[emoji]127831[/emoji]I use the optional onion, plus about three celery ribs and half a bunch of fresh parsley. A roughly chopped garlic clove or two tossed in is nice, too.
[emoji]127831[/emoji]We don't have white pepper, so I put a couple extra grinds of black pepper in the rub. I've never let the chicken sit overnight with the rub, I just coat it and toss it in the crockpot, on top of the veg.

[emoji]127831[/emoji]To strain the juice, dump the contents of the entire crockpot into a collandar placed over a big bowl. This makes picking the chicken easy, too. It falls right off the bone. Mmmmm. :jive:

Basic Gravy:
In a big skillet, melt about 3 TB butter. Stir in 3-31/2 TB of flour to make a roux. Cook and stir the roux for a few minutes, until lightly browned. Add a splash of white wine, stirring constantly (About 1/4 cup of wine, I guess. I eyeball everything since the chickens are different sizes. Or, you can skip the wine altogether- the gravy is still fantastic without it). Then, slowly add the chicken juice, constantly stirring. I add the juice in small batches and wait until each addition is well combined before adding more. Keep stirring until the gravy thickens.

The resulting gravy is so dark and delicious, I could drink it straight from the pan. Sometimes, I have to reduce it a little, or we will just use it thin, like a sauce. It's still outstanding that way.

I was in Giant Eagle today, I usually go to Kroger because I think they are a little cheaper but I wanted to go somewhere different.  This is the first cool day we have had after labor day we have missed a lot of the hot weather that other people have had this summer.  They had several soups in their deli and I got a cup of the Chicken noodle soup and it was really good.  I should try to make some soup again.  The problem with soup is that I can't make just a little bit of it and anything with egg noodles in it tends to not freeze well.

My Mom always made her chicken noodle with the egg noodles on the side, for that very reason. We'd just throw a little of each together in a pan when reheating.

I'll never forget one time when I was a teenager, my best friend Rachel asked what was in the big pitcher in the fridge. After a quick glance, I said pineapple juice. She poured herself a glass and I wasn't really paying attention. A couple seconds later, she started sputtering and cussing. It was the chicken noodle soup Mom had made the night before. :lol3: I don't know why Mom put it in the iced tea pitcher, but even worse, I don't know why Rachel didn't notice while she was pouring that something was very off with the pineapple juice!

i enjoy many different kinds of soup, and i love stews too. i think my favorite, and the soup i eat the most during the winter, is chicken noodle soup -- either homemade (using a chicken carcass), or canned condensed. i'm a big believer in being proactive about preventing colds/viruses during the cold weather months. and while i won't say that chicken based soups could prevent a cold, i do believe it can't hurt to include them in my meals plans on a regular basis during the winter. i also change over to drinking orange juice with my breakfast during the winter months, for the vitamin c.

i use my crockpot more during the winter months too. i enjoy chili too. hmmm.........i'll have to look into a recipe for chicken corn soup, that sounds like it would be very tasty!

i also make more casseroles during the colder months. things like baked ziti, beef burrito casserole, ham and scalloped potatoes.

Here, we can pay $13 or $17 a month depending on size and you get an assortment of veggies and sometimes fruit. This month, more fruit than normal because of the season. We got a watermelon, cantaloupe, corn, butternut squash, an onion, some tomatoes, zucchini, green onion, Swiss chard a cauliflower and a broccoli.
That's awesome. It would be nice if we had something like that.
