Allergies?

My cat had a problem when he was a kitten with diarrhea. I took him to the vet he said I should try different foods. So I tried every kind of meat, grain, grain free, etc. Nothing seemed to work. Finally I went to a different vet and she gave him antibiotics and a vet grade kibble and since then no diarrhea. But I noticed he is still generably irritable. He straches his ears and shakes his head sometimes like it's bothering him, he also twitches them quite a bit. I got his ears checked out a while ago and the vet said it doesn't seem like there's anything wrong, but who knows. He has a tendency to over groom. He usually doesn't like to be petted, his skin will twitch where I touch him and he'll start licking himself right away. This isn't always the reaction, sometimes he will allow it and his skin won't twitch but he still seems irritable. He seems to always be in fight mode, his tail is always twitching and his head is always moving around. He's gets pretty easily stimulated and I wondering if that's just the case or if he still has some sort of sensitivity. He doesn't scratch too much, but I have noticed that he has thin fur near the front of his ears, maybe that's just the way his fur is or maybe he straches there too often without me noticing, Im not sure.
