Help! Canning / Pickling Question!

I am knee deep in pickle making and I've got more cucumbers sliced than I've got jars! 


Can I put the sliced cucumbers in the refrigerator (in a zip lock bag) and finish tomorrow?  Google is failing me on this one! 

So far I've got 7 jars of Bread & Butter pickles from a recipe Pam/Winchester gave me and 4 jars of Bread & Butter from a mix from the Ball Canning company.  I have at least 4 more jars worth already sliced and a bunch more to slice up.  Plus peppers to pickle.  I feel nuts...

Cover them with cold water and seal in an airtight container. They should be good for a couple of days.

Why not make freezer pickles?
I have 19 zucchini and summer squash breads in my freezer. 
 I swear I'm not exaggerating; I took a count!! 
  I need a 2nd freezer.  I will eventually bring some of those breads to my mother's house to store in her extra freezer.  I'm just nervous because whoever put in an outlet for that freezer didn't consider the load well and the circuit it's on tripped when they went to iron some clothing a few weeks ago.  They didn't realize the freezer was off until everything in it had defrosted. 


I put the sliced cukes in a container with water like Goldycat suggested and ran out to Walmart.  I bought 2 cases of jars (so 24) so I should be set.  I should have gotten more sugar while I was out.  I also got some cheesecloth so I don't have to go searching for that tomorrow.

I think you'll be fine. But don't let them go too long. And drain them very well.

19 loaves of bread. Oh, Mooch! You know, you should work until you have 52 loaves of bread; that's one full loaf a week for one year.


I did that with pies a couple times. I started with different kinds of cherry pies, then did peach pies, some pear pies, and then worked on a ton of different kinds of apple pies. In between using what was in the freezer, I supplemented with a lemon meringue pie, chocolate chiffon pie, pumpkin chiffon pie, and the traditional pumpkin pie. We enjoyed a pie of some kind every week for a year. I think I did that 2-3 years in a row and then I finally said, "That's enough of that!" Rick loved it while it lasted; he's a very big pie fan. I hardly ever bake pies now, other than my yearly apple baking frenzy.

I think I made either 22 or 24 total.  I've only given 1 away because I didn't do a great job with removing the seeds from the zucchini so I've found a couple tough seeds here and there in those.  DH and the kids don't mind; but I don't want to give those away.  The summer squash ones are ok though.  I made zucchini with golden raisins and lemon blueberry zucchini (my fav!).  Then I did one with crasins and white chocolate chips.  For the Summer Squash breads I did plain, with golden raisins and with crasins.  The crasins are really good in it too!  The white chocolate chips didn't do so good. They pretty much melted into the bread.  It tastes ok; but it wasn't what I envisioned.  

I dreamt about making pickles last night.  Seriously.  I made the mistake of drinking iced tea too late in the day and had a lot of trouble gettng to sleep.  It woiuld figure that once I did; it was all about pickles. 


I've got several on my list to do today (if I get enough get up and go) and then I'm thinking of turning some of the bigger pickles into relish.  If I make tuna sandwiches; I put some relish in it.  Also lemon pepper and lemon juice; but the relish in the tuna is really nice!  I probably won't make a lot.  Maybe 2 or 3 jars since we don't usually go through that much of the store bought stuff in a year. But if I've got the cukes I might as well try.
