Your aunt's cat is beautiful. I am sure she is a Turkish Van, and could well be a purebred. If you are unfamiliar with the breed, there's plenty of information on the internet about them. I have always admired them, and fostered one last year.
I would have advised to stick with the food she was used to until she'd settled more. You may have gone past this point now, but perhaps giving her some familiar food for a little while, in the bowl she was used to if you have it, might be reassuring for her. So much change in an old cat is very stressful, and can definitely bring on serious illness. She will also be susceptible to cat flu if she has ever had it in her life, as it can reoccur in stressful periods.
I'd highly recommend the Feliway diffuser and/or spray to help her settle.
Another thing you might consider is a gentle laxative. I used one (which came in a tube) provided by a vet. It doesn't give them the runs. It simply is a concentrated roughage that helps move things along, and it is tasty so they usually accept or even enjoy it. Perhaps you could ask the vet about it.

And you may just happen to come across a single person who no animals who would love her for company. Especially at her age, she sounds like a cat that would do best in a quiet household with no cat spats,
