When I adopted Tom he had hyperthyroidism and was put o medication to bring the T4 numbers down. They came down pretty steadily but the last T4 test showed he was now hypothyroid with his numbers being slightly below the normal range.

The vet kept him on the meds but reduced the dosage slightly hoping to bring the numbers up to the normal range.

During this period of medication he did not show any of the outward signs of the problem such as excessive eating or drinking.

However as of this week the eating and drinking has increased, especially the drinking. His weight has seemed normal and has changed very little since I adopted him 6 months ago. I should adds it has been hot and he has been outdoors for longer periods of time - supervised of course.

He is due for another T4 blood test in about 2 weeks and am wondering if I should go for a full blood panel.

I would definitely discuss the excessive drinking with the Vet when you go in for your visit, and if it warrants a full blood panel, then absolutely get one.   Do be sure to mention though that he's been spending more time outside where it's hot, which may or may not account for him drinking more.

He's not showing any other signs of hyPERthyroidisn, is he?  If so, I would try to schedule my appointment sooner.
