New microwave

We were visiting with our kids and the grands yesterday. On the way home, we stopped at the HH Gregg in that area. And came home with a microwave. Finally.

I had posted a few months ago that our old microwave died. Rick found a very old, very small microwave in the basement that he used to use at work and brought that up to the kitchen. And then that one died, too. We've been without one now for a good 4-6 weeks or so. Rick has had to heat his milk for oatmeal in a small saucepan on the stove (and then wash the saucepan because our dishwasher died about a month ago, too, and we haven't replaced that). So life in the morning is a bit of a hassle. 

Rick suggested we stop at HH Gregg on the way home, so I did some online research to see what they had, prices, etc. As a rule, the prices at HH Gregg are quite a bit cheaper than at Lowes or Home Depot. I found a Sharp Carousel that I wanted to check out. 2.2 cubic feet, 1200 watts, stainless. All the buttons I need. And it has a Soften button that I can use to soften butter, chocolate, cream cheese.....no more guessing. It was less than $200, so it found its way into our car. Looks huge on the counter, but I need a big oven as I often do stewing and braising in the microwave instead of using the stove. With the little oven that Rick had, I couldn't even fit my ten-cup measuring glass inside, let alone a casserole.

I am making a New York-style Crumb Cake in a few minutes (we're going to visit with friends tonight for dinner and I'm taking dessert....we will have it with homemade vanilla ice cream and fresh strawberries from the garden), so I'll get to check out that Soften button! 
 

Still need to replace that dishwasher....

Congratulations on your new microwave Pam :clap: I don't know how you coped without one for so long. I don't know what I'd do without my microwave (even though, like you, I cook from scratch).

:cross: that you find a new dishwasher soon.

Enjoy the new microwave. HH Gregg is a great store. We bought both of our TV's there. Prices are good and they are nice to work with.

I forgot. When you bake etc do you use a spray oil for the tin and if you do, how much do you use?

Thanks, guys! We like HH Gregg, but there isn't a store close by. So we usually stop in to check something when we're coming home from visiting the kids as it's right on the way home. It's a nice store.

We like the microwave. Rick thought it was awesome this morning. 
 He said it made his life a little easier. I don't think the Soften button is going to be my new best friend though. It rapidly started to melt the butter yesterday. Butter was supposed to be softened, not melted. So it works a little too well; I'm glad I was standing by watching. But that's OK....I can deal.

Judy, this cake is delicious! I think it's the best crumb cake ever. 


NEW YORK-style CRUMB CAKE (from America's Test Kitchen)

Crumb Topping:

1/3 cup granulated sugar 
1/3 cup dark brown sugar 
3/4 teaspoon ground cinnamon
1/8 teaspoon table salt
8 tablespoons unsalted butter (1 stick), melted and still warm
1-3/4 cups cake flour 


Cake:

1-1/4 cups cake flour 
1/2 cup granulated sugar 
1/4 teaspoon baking soda
1/4 teaspoon table salt
6 tablespoons unsalted butter (3/4 stick), cut into 6 pieces, softened, but still cool
1 large egg
1 large egg yolk
1 teaspoon vanilla extract
1/3 cup buttermilk
Confectioners' sugar for dusting


Topping: Whisk sugars, cinnamon, salt, and butter in medium bowl to combine. Add flour and stir with rubber spatula or wooden spoon until mixture resembles thick, cohesive dough; set aside to cool to room temperature, 10 to 15 minutes.

Cake: Adjust oven rack to upper-middle position and heat oven to 325 degrees. Cut 16-inch length parchment paper or aluminum foil and fold lengthwise to 7-inch width. Spray 8-inch square baking dish with nonstick cooking spray and fit parchment into dish, pushing it into corners and up sides; allow excess to overhang edges of dish. (You know, I rarely do this. I just spray my baking pan and that's it. The cake comes out fine regardless.)

In bowl of standing mixer fitted with paddle attachment, mix flour, sugar, baking soda, and salt on low speed to combine. With mixer running at low speed, add butter one piece at a time; continue beating until mixture resembles moist crumbs, with no visible butter chunks remaining, 1 to 2 minutes. Add egg, yolk, vanilla, and buttermilk; beat on medium-high speed until light and fluffy, about 1 minute, scraping once if necessary.

Transfer batter to baking pan; using rubber spatula, spread batter into even layer. Break apart crumb topping into large pea-sized pieces and spread in even layer over batter, beginning with edges and then working toward center. Bake until crumbs are golden and wooden skewer inserted into center of cake comes out clean, 35 to 40 minutes. Cool on wire rack at least 30 minutes. Remove cake from pan by lifting parchment overhang. Dust with confectioners' sugar just before serving.

Note: Do NOT substitute all-purpose flour for the cake flour, as doing so will make a dry, tough cake. You really should use cake flour.  (If you REALLY must use all-purpose flour, then scoop and level one cup of flour; remove two tablespoons of flour from the measuring cup. When you use substitute all-purpose flour for cake flour, you use two tablespoons of all-purpose flour LESS for every cup of cake flour in the recipe.)

If you can't find buttermilk, you can substitute an equal amount of plain, low-fat yogurt. (I have powdered buttermilk on hand all the time. For the record, you CAN easily freeze buttermilk and it will be fine when thawed. I recommend freezing in one-cup containers.)

When topping the cake, take care to not push the crumbs into the batter.

This recipe can be easily doubled and baked in a 13 by 9-inch baking dish (and that's how I always make it). If doubling, increase the baking time to about 45 minutes. I do mine in a glass cake pan and it's usually done in 35-40 minutes. All ovens bake differently.

Cooled leftovers can be wrapped in plastic wrap and stored at room temperature for up to 2 days.

Congratulations on your new microwave!! I don't know how I'd live without one. 

I love crumb coffee cake. I have been making them since I was 10 years old. If I remember correctly, it was the first thing I ever baked by myself. 


Thanks for sharing the recipe. This is one that I found a few years ago and it is fantastic. I use Granny Smith apples because they are my favorite for baking

Congrats on the microwave!!

I was at my parents this weekend.. and they had to get a new microwave. My mom used it to warm up dog food. few minutes after she was done.. it blew up. Turns out from slamming the door too hard, it cracked and the metal piece was exposed, causing it to pop and go bye bye. It was only a year and half old!

Congrats!  I'm surprised you made it that long without a microwave!  I didn't think I used my microwave all that often and when it died I thought I could live without one.  Boy, was I wrong!  LOL

Kat, I think I made Emeril's apple coffee cake a few years ago, but I don't think I made the glaze. That's a good cake.

I think I could live without a microwave easier than without a dishwasher too. 

I have made it both with and without the glaze. it's really good either way but the glaze takes it over the top. I need to make one soon. Someone reviewed it and said that they made it with blueberries and it came out great. I may have to try that as well.
