Summery make-ahead Crock Pot meals

I am looking for some simple, healthy summery crock-pot meals to freeze for the week- lunch and/or dinner.

Most I am finding seems like its for colder days (soups, chili..). I am looking for something light and healthy (As I joined Weight Watchers recently).

Pulled chicken is nice! I threw five pounds of chicken in my crock pot one day and just kept pouring barbecue sauce over it! It smelled so good by the end of the day and it lasted for so long! I didn't freeze any, but I plan on it next time cause we were eating it for lunch and dinner for a week and it was just too much!

I used a big bag of frozen chicken, and had to keep on draining it and adding more barbecue sauce cause I guess the frozen chicken had broth in it and made it too juicy, so I'd keep an extra bottle of barbecue sauce just in case!

I need to try and find some more summery things to cook too, cause I'm really bad about using the stove or oven when it's hot, but really I think any sort of barbecue meat would work well in the crock pot!

CROCK POT APPLES (could have for a bit of dessert--with vanilla yogurt--or maybe mixed-in with oatmeal for breakfast)

5 to 6 cups of firm tart apples such as American Cameo or Granny Smith
1/3 cup brown sugar
1 tsp ground cinnamon
1/4 tsp ground nutmeg
2 tablespoons of corn starch
1/2 cup apple cider

Peel, core and slice apples into medium to thick slices. Place apples, brown sugar, cinnamon and nutmeg in slow cooker. Dissolve corn starch in apple cider and blend well. Pour over apples and stir to blend. Cover and cook for 5-6 hours. Stir halfway through cooking.

CROCKPOT SOUTHWESTERN STYLE CHALUPAS (from Cooking Light)
serves: a lot!

1 pork roast, 4lb
1 pound dried pinto beans
1 can chopped green chile peppers, 4oz
2 tablespoons chili powder
2 tsp cumin
1 tsp oregano
salt and pepper to taste
1 quart water
1 package corn chips, 16oz

In a slow cooker, combine all the ingredients (except the corn chips) and turn on low for 4 hours. Remove roast and pull meat apart discarding fat and bones. Return the pork to the crockpot and continue cooking 2 to 4 hours. (Add more water if necessary.)
Place chips on a serving plates, spoon pork mixture over chips and serve with desired toppings.

Notes: I put the slow cooker on for 8 hours and then pulled the pork out and cut it into small chunks. It pretty much fell apart. Then put it back into the crock pot and kept it on low until dinner time.

Your toppings are endless: shredded cabbage, pickled jalapeno, avocado, thin sliced purple onion, diced tomatoes, shredded lettuce and jack cheese.
 

This also freezes well: fill flour tortillas for some hearty burritos or just freeze for another nacho type meal.

CROCK POT ITALIAN BEEF

One 3-5 lb. beef roast (I use rump or London broil, a nice chuck roast will shred beautifully)
1 can low sodium beef broth
1 tsp. salt
1 tsp. black pepper
1 tsp. dried oregano
1 tsp. basil
1 tsp. onion powder
1 tsp. parsley
1 tsp. garlic powder
1 bay leaf
2 pkgs. Good Season's Italian dressing mix

Combine roast, beef broth & seasonings in a slow cooker. Cook on low 10 - 12 hours or on high for 5-6 hours or until meat is tender and shreds easily.

When it's done, shred meat with a fork & place back into juices in pot. Place meat on hoagie buns.

Melt mozzarella cheese on top or add roasted peppers if desired. Hot banana pepper slices are good too.

Note: I brown the roast on both sides first in a hot skillet, but it's not necessary.

I remember my mom used to put chicken in the crock pot with italian dressing.  It was always good. She also added carrots & potatoes in with it.                                                                                     You could always leave out the potatoes, & just make a salad to go with

Somebody gave me a recipe for chicken with Catalina dressing, too, in the crock pot. It wasn't bad.

I like to marinate chicken in Italian dressing for about 4-5 hours, and then throw it on the grill.
