Eosinophils and food allergy

I'm going through some test results and trying to better understand my cat's allergy issues. A couple years ago, she had hepatic lipidosis when I was switching her to a new food (ran out of the old one earlier than I thought I would and only had a very short time of overlapping brands). Her blood test from when I took her in for the hepatic lipidosis showed normal eosinophil levels (3, normal range 2 - 12). On her blood test three weeks later, once she was eating normally again, her eosinophils were high (19).

She basically fasted for three days before the first blood test (not including some tuna water she threw up). Is that enough time for eosinophil levels from a food allergy to drop? Or was the food she was eating right before the hepatic lipidosis episode (that she hated enough to starve herself) actually not causing allergic inflammation? Or could the hepatic lipidosis have somehow made her eosinophil level lower unrelated to whether her diet was causing an allergic reaction? Are eosinophils something that respond immediately to diet change?
