It has been two days since my cat had her one kitten, yet she is obsessively needy to the point where she will hardly nurse the kitten unless I am around. She follows me around constantly a mews as though she is in need of something. She is eating, using the restroom and seems normal aside from this. Also I was expecting more than one kitten, but she has only had one. I don't feel any movement in her belly, but I am hoping that there was only one, she is a first time mother and I am just a little uncertain with things at this point. I really want the avoid taking them (mother & kitten) to vet due to sub zero weather here. Also one more thing, she is not showing any signs of labor, but she keeps calling me to her nest and rolling on her back for me to rub her belly. What should I do? What should I check for? Please let me know. Thank you.

Hopefully she is just unsure and does wants your company.   Such does happens with inexperienced moms.  Some dont cease before the owner makes their nest in the bed....

And yes, do rub her belly if she wishes it.

Them having just one isnt that unique.

Your problem is, you dont know for sure if there some more, perhaps one more kitten.  As it seems you are unused to palpitate her.   Do you have around anybody who is decently experienced with palpating cats or dogs?  Any neighbour or somebody you can phone who can come over to you and feel

If not, phone the vet and ask. Perhaps he can either recommend you someone, or can tell you what you shall try and feel out, when you palpitate.

Good luck!
