A few basic questions I'm sure, new to cat parenting

So I have 2 kittens (5 1/2 months old) that are sisters, and I have some pretty basic behavior questions.
Kerri, the smaller of the two LOVES attention. She's always on me somewhere, my lap, shoulder, arm, head, feet, where ever she can be on me she will be on me. She's vocal, loves to play, cuddles, kisses, you name it! She also loves belly scratches and being patted, and I've been told that that is somewhat odd for cats to enjoy. Constantly purring, lovey lovey kitty! She is also extremely outgoing and attacks anything that moves, chases the dog, and pretty much owns the house.
However, her sister Niki, is almost the total opposite. She only seems to want to interact with my 4 year old daughter. Every now and then she will come ask to be petted, and I do so in the way she likes (slow and only down her back and on her cheeks) The only time she will really interact with me or my husband is if we bring out the mouse on a string, and then she transforms into this amazing sky dancing cat!
Anyone new comes over and she hides, like today, someone came to fix my washer, I had her in my arms because she likes to run out the door when it is open, and that is her normal game when I let the dog out, but at the sight of a new person she totally tore up my hand and took off to hide.
She is always off by herself sleeping somewhere, usually in my daughters room with her while she plays.

Now I'm glad that she has defiantly decided that my daughter is her girl, she sleeps under the blankets with her, and is always with her. I'm just slightly worried that she isn't getting as much out of life as her sister when it comes to being social. I'm a dog person and this is my first time having cats, so I really don't know much about them. A lot of people have told me that it's normal, but I see a fearful kitty and I just want to do the right things for her.

We have cat things that she can be up high in, or down low, lots of cozy spots to be, LOTS of toys every where, bunches of good window space for outside viewing, she really just stays in my daughters room unless she's coming out to eat or get some water. I'm trying my best to make their space engaging and interesting. They have both been socialized the same way, and loved unconditionally.

Any advice on how to help her be more outgoing? Or is this totally normal and I'm just to new to cats to understand that?

How long have you had them? Maybe Nikki is still adjusting to the house? It took my cat two months before she decided she wanted to let my roommate see her.

Both kitties sound completely normal to me. 
  Just like us; they can have very different personalities.  My 2 are also litter mates and I've had them since they were tiny.  They do some things alike but in other ways they are very different.  In the past I had a cat so friendly she never met a stranger.  I had one that never liked anyone but my mother and I.  That was my soul-kitty. 
  

I think it's just wonderful she has chosen your 4 year old as her human!  That must make your little one so happy too!

It sounds like you've done everything I would suggest as far as having high place, places to hide, etc.

I have had them since they were 6 weeks old, lots of time to adjust! I adopted them on a whim because someone was just desperate to be rid of them.
My daughter has been begging for a cat from age 2 up until we got our kitties haha, she calls herself "The Cat Master" and pretends to be a cat all day every day! She named them both, feeds them twice a day (dry and wet food, but I do want to learn how to make them food) and she makes sure their water is filled all day. She also brushes Niki with a little baby brush, and make sure their beds are always clean. The only thing she doesn't do is clean the litter box, because I feel she is to young to do it still, but she says when she turns 5 that I have to let her do it! She loves her cats so much, and she is so responsible with them! I've never even had to remind her to do any of her "cat mama jobs" as she calls them.

I'm glad to hear that it's pretty normal though, I just want them to have the best life possible!

This is the most adorable thing! Your daughter definitely sounds like a "cat master" to  me!! 

Keep up the good work with the cats. Every cat is different :)
