There are different kinds of eggplant... the long skinny ones seem to stay firm.  I like them diced and lightly sauteed with fresh garlic, fresh ginger, red bell peppers and a light drizzle of teriyaki sauce.

Agree with others that over cooking veggies is usually the problem.

That said, I am picky about brussel sprouts, and haven't tried cooked okra (pickled, yes).

I like kale chips... roasted in the oven with a bit of salt.  They remind me a little of nori (seaweed) wraps.

There is one legume that I thoroughly dislike... lima beans, aka butter beans.  I do not like those things at all.

Other than that, I generally like my veggies. 

My problem is that I like fruit more.  Given the choice between a carrot or an apple, I'd reach for the apple.

I have never had okra, so I cannot comment on that one.  I eat all vegetables, except Lima Beans.  My dad used to make me eat all the lima beans off my plate.  I never have made my daughter eat a lima bean and she is a vegetarian.

green bell peppers. I hate them. doesn't matter how they are cooked or not cooked. I'm also not a fan of okra, escarole or brussel sprouts.

LMAO. You sound like my late husband. He had to eat lima beans as a kid. He hated them too. His mom used to make this canned vegetable blend called Veg All. Ew. I love most vegetables but this brand is gross. She denies making him eat it but his brother remembers it well. They both hated it. I don't really like canned veggies. Frozen or fresh for me.

When I was a kid Veg All was a staple of school lunches.  It fit right in with a hot school lunch, at least the ones then which is many years ago.

Tomatos. I'm ok with ketchup, tomato sauces, salsa, etc but I will not eat plain tomato.

As a vegetarian I like almost all vegetables. Kale is my favorite but I do not like the other greens, especially collard greens. I could eat my weight in kale. YUM!!!!

As a child, I loved the things kids hated: broccoli and spinach. They're still my favourite.

I used to hate mushrooms of all kinds, pickles, bitter melon, and tomatoes. The smell of dong gu mushrooms used to make me vomit. I'll eat them all readily now. I only recently tried brussel sprouts, and I like them too. Love eggplant and beets, but have never tried okra.

I hate olives, but they're considered a fruit, I think..?

It seems whether you like a vegetable or not depends on two things: how fresh the vegetable is, and how it's been prepared. 

A soft green pepper (one of my least favorite vegetables) that is past its prime and has soaked up grease from being stuffed with cheap ground meat, for example, isn't going to taste great. But take a fresh-picked pepper sliced in a salad with just-made vinaigrette or skewered on the BBQ and served with chicken fajitas, then you have something great.

I will eat okra in any way, raw if it's fresh enough, but I tried it once after an acquaintance made an okra dish and whew, horrible. It was dry and loaded with curry and that was the only thing I could taste. If that was the only way I'd ever eaten okra, I would not be a fan.

We used to have mixed vegetables at home--frozen.  I'd pick out the lima beans.

I agree with you. When we were kids, Mom used to make endive with bacon and serve it over boiled potatoes. I hated that stuff and would never eat it. But then about ten years ago, she called me at work and said she was making endive and did I want to come for lunch. Oh yeah! For a few years (until she passed away), that was our spring food ritual. Mom would make endive and I'd visit with Mom and Dad (and then just Mom) over my lunch break. I haven't had endive since Mom died. She made it with bacon and hard-boiled eggs. Never would touch it as a kid, but now I'd eat it. Hated mushrooms, but now I love them. Hated parsnips, still not crazy about them, but I'll eat them roasted. I can eat a raw turnip, but not a cooked one. Would not touch squash, any kind of squash.....you couldn't pay me enough money to touch squash. Now? I love the stuff.

Doesn't matter what olives are, I still don't like 'em.

Good point! I'm not fond of frozen Brussels sprouts that you buy in the store, but fresh sprouts, roasted in the oven are truly decadent. They're just delicious. Canned asparagus is just nasty, but fresh asparagus is delicious.

We're trying to start an asparagus patch in the garden. Planted a few last year and they all seemed to grow OK. I'm looking forward to growing them.

Our son did (and still does) that. There's something about limas that he hates. And it doesn't matter how they're prepared; he thinks they're diseased and should be declared illegal.

Technically an olive is a fruit, but it's treated like a vegetable, the same as tomatoes are. Do you hate all olives? I don't particularly like black olives, find brown ones okay but nothing spectacular, and love green ones. Their color depends on the degree of ripeness. It's the same with asparagus. I find unripe white asparagus too bland, but love it green.

There are several vegetables that I used to hate but I like them now.  Growing up vegetables were always cooked to death and I think that was part of it.  Just about any vegetable that can be eaten raw I prefer to eat raw.  I think I overdosed on the overcooked vegetables when I was growing up.

Yeah, it definitely depends on what exposure you had growing up. My boyfriend hates soup and it's because the only soup he's known has been "dutch soup", which is water, a potato, and cabbage served lukewarm.


My mom has a way with food, always cooking things to perfection and not a second more, so the greens were always at their brightest and never wilted, and the way eggplant is cooked in Chinese dishes is delicious (none of that rubbery blandness, regardless of the type of eggplant).

She never prepared anything with olives though. I can't do any olives and I can't even think of a context where I would like them. My boyfriend loves them, but he loves salty. The last time I had an olive, it was garlic stuffed (and I LOVE garlic), so I split it in half and took the whole chunk of garlic inside. I still couldn't handle it.
Even smelling it on a pizza, I say that pizza has been ruined.
