So confused!

Greetings, all!
I'm brand new to the site, and also new to being employed by cats! I have soooo many questions-mostly about choosing a good quality canned food (one that's easily available in Canada)
Our two babies are both rescues, and both turned a year old in November. Toby joined our family at the beginning of September, and Callie in November. A couple of days after Callie's arrival, she showed signs of an eye infection of some sort, and she was sneezing A LOT. A trip to the vet resulted in an oral antibiotic that seemed to clear the infection within a couple of days, and the sneezing stopped, too.
About a week after Callie finished her antibiotics, Toby's eye started to 'gunk up'. A trip to the vet revealed that Toby had a scratch on the surface of his eye-most likely as a result of play fighting with Callie. The vet sent Toby home with some eye drops and several packets of Purina FortiFlora. We were told to give both cats a packet of the probiotic once daily, as it would help to boost their immune systems.
And that's when things got 'weird'. The two cats have proven to be very different eaters. (When Toby came to us, he was on Science Diet dry, and Callie was on Royal Canin dry) Toby has from day one been a bit of a 'grazer'. He will eat a few pieces of kibble, and walk away. Returns about every half hour to nibble. Callie, on the other hand, stands and eats everything all at once-so fast that she has thrown up a few times. Then she goes to Toby's dish...
We have been working towards a wet food diet, and so the FortiFlora was mixed in with a bit of water and poured over their dinner meal like a gravy. Both cats seemed to like it, and licked their bowls clean. From the next morning on, Callie's eating habits seemed to change. She turned up her nose at her morning kibble, and ate very little (for her) that day. Today is day 5, and since the introduction of the FortiFlora, Callie has stopped eating so fast. She often leaves food in her dish and returns to it later.
Does anyone know if this change could be a result of the FortiFlora? Has anybody used this (or any other) probiotic long term in their kittie's diets? At first I thought that Callie was sick, but thankfully that doesn't seem to be the case.
Also, the switch to wet food seems to be going well. They are currently eating 3 meals a day, two wet and one dry. Should be completely away from the dry within a few days. Does anybody have recommendations for a nutritional canned food without a lot of ingredients that cats just don't need? I've tried researching on the net, but there is an UNBELIEVABLE amount of information out there!
My apologies for the long post-if anybody made it through the entire thing, I'd sure appreciate any and all advice from all of you more experienced cat people!

I can help you with this part.    

Tiki Cat and Nutru Natural Choice loafs (pates)are good foods.  Grain free and neither is filled with unneeded fruits/veggies.  Most cast seem to love them too.  Any of the Weruva chickens are also good choices.   Natures Variety Instinct is another that is also good. It does have a small amount of veggies but they are big enough that you can pick out what you don't want.

I'll look for those this weekend. I need to find something quickly, because both kitties are starting to refuse their dry food, and we are running low on the wet that they're currently eating.

@Tracye...  You could also look for Fancy Feast Classic/Pate formulas ..  My cats love all flavors ..

It is pretty decent food   . Low carb ,  grain free ..

I know that FF is quite easily available, but the one store I looked in didn't carry any of the 'Classics' line. (It was a grocery store, though, so a trip to the pet store may have better results.) I think it should be okay to try several different brands as long as the 'base meats' are all the same and the ingredients are quite similar.

Oh yeah , try a lot of different things to see what they like . That is a great idea .  My cats just happen to be very picky and Fancy Feast Classics is the only brand they will eat consistently ..

I have seen other post that Fancy Feast in Canada is not called "Classic".  @pinkdagger  How is it labeled there?

I pick different brands with different proteins and rotate. Some days they love one food the next they change their minds. 3 days later it is their favorite again.

Yes, in Canada, they are called FF pate. Take it easy on the "cod, sole, shrimp." It's phosphorous levels are sky-high.

Yep, they're just called pate here. No explicit label or fancy little ribbon for us, just Fancy Feast _____ pate.

What I did when I was looking for a wet food was I went to websites like Petsmart and Pet Valu and saw the selection they had there (whatever you have nearby and readily available to you), and started cutting out ingredients I didn't want to see. I wasn't insanely picky about wet foods, so I just cut out corn, for example, so that gets rid of 3 or 4 brands of foods. If you want to go grain free, look for grain free or look to avoid stuff like rice or rice flour, which can be common in wet foods. I actually really like the Pet Valu brand Performatrin, which is grain free and byproduct free. It's not too expensive and the cats tend to like it more than other higher end brands.

I keep a rotation of different flavours and proteins too. Our cats like the variation so I try not to lock down and will often try new brands as I stumble upon them and see how the cats take to them.

Thanks for the suggestions, everybody! I stopped by Petvalu this afternoon and picked up a few different brands, but stuck to the proteins that they have been eating. I'll try a new brand every few days to make sure that they can tolerate the changes and to see if they appear to have a preference. So far, they don't seem to be too finicky. I'm trying out the Fancy Feast, Performatrin Ultra, Wild Calling and Go! .If they seem to prefer one of the higher priced brands, I want to make sure that it's one that's available in a sharing size can. One of them has developed a new food habit over the past day or so, though. She tries to bury her meal when she's done with it. Hope she's not trying to tell us that the food is similar to what she leaves in her litter box!

Haha! Mo buries everything, and he does it with food too. I assume they bury it to hide and save for later because he always comes back to it.

It's instinct from the wild to cover their food to go back later for it. My street cat does it.
