Guacamole, anyone?

Actually at the rate I am going it may be closer to cinco de mayo when I get guacamole.


My husband bought me a molcajete for Christmas:



I'm in the process of seasoning it and it is a fairly involved process. I've soaked and scrubbed and now I am grinding beans to a powder. You have to do this four times. I'm still on the first. :lol3: It's harder than it looks. :lol3: After the beans then you grind dry rice four times, then wet rice a few times and then chiles, garlic, salt and cumin and let it sit for 12 years. I've done a bit of research on the seasoning and this method seems the most thorough. There are a few that swear by taking it to a do it yourself car wash and using the power sprayer on it., No thanks! :lol3:

This is going to take a while. :lol3:

Holy smokes, 12 years to season, are you sure? I have two of these, a little and big one, that were bought in Mexico. They were gifts, so I have no idea if they are basalt or not so I've never used them for cooking. They are both REALLY rough stone inside and outside, but yours looks really good and much more useable. Mine are out on the deck right now, used as a decoration. 

Anyway, I use a fork to smash the avocados for guacamole, that seems to work well (it leaves some chunks) but doesn't add the flavors from the stone. Now I'm kind of curious maybe I should bring them in and boil them, then try to season?

OMG!!!!! That was a HUGE typo!!! It should have said 12 hours! :eek:

Betsy, we started with the wire brush. During the first round of beans there was definitely still gray dust coming off. I may not have worked it enough with the wire brush. I'm happy to say we've moved on to the second round of beans now. I think we're getting the hang of it. I've got it in the kitchen and when either of us goes in there, we work at it a bit. I tried doing it for an extended period yesterday, but my hand was just getting too sore.

Cat, I've always just used my potato masher and a bowl and have made some fairly respectable guacamole. I've done a lot of reading since getting this and many swear that using a molcajete will produce the "best guacamole ever". Only time will tell and I'll let you know. :bigthumb:

We are only on our third round of beans. Maybe we will have guacamole for Valentine's Day. :lol3:
