Leftover vegetarian tacos! 
That sounds good! I may have to do vegetarian taco salads this week! 


We have some of the bacon, leek and potato soup leftover from Saturday night and will have it tonight. Rick really liked it, me not so much. It was OK, I guess. I liked the apple muffins more. 


We tend to eat a lot of soups, stews, and chili when it's really cold outside. I try to make fairly hearty soups.

I picked up some salad fixings earlier and some chicken sausages. My husband called and suggested we go out though. I have a doctor's appt tomorrow that I'm stressed about and also some other things going on and he thinks the distraction would be good. We'll have to see.

Tonight's menu is stir-fried beef and broccoli with carrots over brown rice for Rick and plain for me.

Whole wheat pasta with roasted butternut squash. OK, I admit it, I'm making this up. I don't know what to have for dinner tonight and I'm thinking that might actually be pretty good. I'm going to caramelize some onions, throw the chunked squash in the oven to roast, maybe add a few baby carrots to the squash pan and roast it together. Then mix it in with the cooked pasta, maybe a few grates of Parmesan over the top. I dearly love roasted butternut squash and this might be tasty....never know until you try it.

We'll see!

Let me know how it turns out, it sounds delicious.

I have ground pork thawing. I think I'm going to make it into shepherds pie. Never tried it with pork but I don't have any beef right now.

Thanks, Pam. Thankfully it went OK. :)

We may end up eating out tonight. We have to be at a wake for 5 and Aaron won't be home until 4:30. I'm not sure how long we are going to be there and may grab something quick after.

I think we're having turkey burgers tonight, on English Muffins.  Not sure about a side yet.  Maybe baked fries.

You know, it wasn't bad. I drizzled olive oil over the chunked butternut and carrots, sprinkled with kosher salt and black pepper, and while they were roasting (about 25 minutes at 425 F), I caramelized one medium onion. I cooked farfalle pasta and then drained it well. 

Put the pasta on our plates, and topped it with the onion slices and the butternut and carrot. Topped Rick's with a bit of freshly grated Parmesan. Seriously, it was not bad. Rick would have preferred some meat, I'm sure, but he even said it was pretty good. Especially since I was winging it from the very beginning.

I'd like a piece of your shepherd's pie, please.

Shepherds pie didn't get made. My son wouldn't let me make dinner tonight so I grabbed a burger and fries and shared it with Aimee.

Leftover grilled (boneless, skinless) chicken thighs from the other night, cubed. Steamed broccoli. Fresh pineapple, cut into chunks and heated with chicken. Brown rice. Sprinkle of soy sauce.

I always grill extra chicken thighs under infra-red broiler in oven. Makes for an easy dinner a couple of days later on.

I took some shrimp out of the freezer and it's thawing in the fridge. Rick will shell it when he gets home and then I'll make dinner. He's bowling early, so we'll be eating as soon as I get home.

Cajun shrimp with steamed broccoli and carrots sounds pretty good for tonight.
