We made turkey and black bean chili. It was incredibly delicious!!!! And there are 4 servings left so I can't wait to eat it for lunch tomorrow. We used this recipe: http://www.budgetbytes.com/2015/02/weeknight-black-bean-chili/
That looks delicious. I think I will add it to my list of meals to prepare for the freezer.
I wasn't in a mood to cook last night so we had pizza rolls and salad.

If you don't have ziti, use any medium tube-shaped pasta. Penne would work as would penne rigate. Don't use ditlini or pipette as I think they're too small. (But I'm not a pasta expert, so I'm not sure).
This is a good make-ahead recipe because you can make it the night before or even the morning of the day you plan to bake it. A nice salad, maybe some fresh rolls, and you're good to go. It makes a lot, but you can easily halve the recipe and put it in an 8-inch baker; just be careful that it doesn't bake out over into your oven.
I'm thinking beef pot pie tonight. Comfort food. It's basically beef chuck browned and simmered in beef broth. With lots of onions and potatoes. And then you roll out the pot pie squares and drop them into the simmering beef. Rick loves pot pie and so do I.

I had a chicken and steak burrito. We went into the city to get free burritos for the grand opening of a restaurant. Turns out, they had the time wrong (flyers said 7) and they were done at 6 but they closed and locked their doors at 5:40. We got there at 6:02. We wanted burritos so we went down the street to a different place.
I only had to feed myself tonight so I sauteed some onion, broccoli and garlic, added some tinned tuna, seasoned with salt and pepper and topped it with Parmesan cheese. It was fast and I found it yummy.
Last night we had salmon, pinto beans, and broccoli. Tonight it's leftover black bean chili.
We are having chicken and potatoes. I'm hoping it stops raining so we can bbq.
probably a baked (microwaved) potato, with margarine and salt/pepper. that is, if i have the energy to make it this evening. i'm way overtired lately.
Burgers on the grill with French fries and salad.
I'm so jealous. I want a burger so bad.

I'm thinking about marinaded grilled chicken breasts sliced over a veggie salad. With a garlic-Parm roll. (Garlic-Parm rolls are a staple in this house)
