Roasted Chicken thigh with Penzy's Northwoods seasoning

Mashed potatoes

Corn

It was a comfort food day~~plus time to eat out of my freezer!!

Rotisserie chicken, mashed potatoes, avocado and large juicey cherry tomatoes. Yum.

I got a "ready-made" single chicken breast with apple stuffing at the meat counter in my supermarket.  Cooking now!  Will have squash (frozen), and rice.

Must have been Chicken Sunday! 
 Ours was really good, even though it wasn't what I had originally planned. I sprinkled Penzey Forward all over the chicken, browned it well, then put it on a bed of sauteed onions. And then threw it into the oven. Right before I took it out of the oven, I placed a couple pieces of Pirate Blue Cheese on top of the chicken to melt just a wee bit. Yum.

We were at the garden show on Saturday and there was a cheese-maker there with lots of good selections of their cheeses. I'm such a blue cheese fan, so I needed to try what they called Pirate Blue. OMG, it was decadent! It had kind of a creamy texture to it and such a good blue tang. It wasn't real expensive either, so we bought a small block. Just enough for a nibble or two for the both of us and then a couple of pieces on the chicken yesterday. There's a small sliver left and Rick brought it to work with his lunch today. So very good. We just love a good cheese.

I'm not sure about tonight. Probably some vegetable soup or something from the freezer. Either that or a Dr. Oetker pizza from the grocery store.

I guess It was a Chicken Day!!!

Winchester, I never thought to put sautéed onions under the chicken.. What I used yesterday was Penzey's Northwoods seasoning. It is a good mix-a bit of heat in it. I do not like hot stuff. I sprinkled it on top, flipped it over and sprinkled some on the bottom also~~~ put it in the over and that was it. I put it in a foil lined pan, sprayed with Pam; then sprayed a bit of Pam on top.. a bit of water in the pan also.. it was so good...I have a small amount for leftovers tonight...A nice flavor.. I love Penzeys spices...

I am eating out of my freezer for a while. It was stocked to the gills! I am the only people person in the house, so it takes a while to empty.. 

Have to see what the rest of the week holds for 'treasures'......

Artiemom, I love Penzey. Never had a bad seasoning, spice, or herb there yet. We don't live close to a store, so I either do mail-order or when I know I'm going to be close to a Penzey while traveling, I take my list with me and stock up. The Northwoods is so good; I really love it with a pork roast. Or even grilled tenderloin. 

Try your breast with some sauteed sliced onion sometime. It's really good that way. All I did was spray my pan with Pam, sprinkle the cooked onions into the bottom, then place the browned breasts (with Forward sprinkled on both sides) on top of the onions. No foil, no lid. 375 degrees for about 35-40 minutes or so, as they were thicker breasts. That was it. If I'm using pork, then I'll add some thick-sliced Granny Smith apples to the mix, too. 

We go through periods where we only eat out of the freezer. We have a lot of chicken in there right now, including two nice chickens for roasting. Some chuck roasts (I want to make beef stew with one of them and then shredded BBQ beef with another chuck roast to use in sandwiches). Some pork chops, some shrimp. And maybe four pork tenderloins. Oh and a couple pork shoulders.....just waiting for some warm weather so we can dig out the grill and do pulled pork on the grill. I have a small pork roast, too; Rick said he's really hungry for sweet & sour pork. I want to use the ground beef for pasta sauce to make some stuffed shells for the freezer and maybe some baked ziti. And the ground turkey will be used for a meatloaf. It's just a matter of cooking!

For some reason I do  not care for the Forward seasoning. To me it has an 'off' taste. I do not think it is the lack of salt. 

I really like Penzey's Herb de Provence for roast chicken or turkey and even pork.  Their Oregano and basil are awesome..

There is a store about 12 miles from me..takes longer to drive than it sounds because of traffic lights. It is a small store but packed with spices!

I went there last fall and bought the Northwoods blend and the Krakow Nights blend. Both are very good...and their vanilla (awesome)

I could live in that store-----smells so good, people so friendly and knowledgable, along with tons of samples to open and sniff....

They are a bit pricey, but I feel the quality is worth it....

I just remembered, I bought a small jar of their Hot Chocolate mix to sprinkle on my morning coffee to make mocha coffee.....Have to put it out and try it tomorrow morning....

Thanks for the recipe ideas...will have to keep them in mind....

I'm cooking the chicken burrito bowl now. I liked the recipe had a stove top version which is what I'm making. It's smells delish. And it's makes alot. I will follow your lead and not add cheese until we plate it. Freezer meal.

Doesn't Pam oil spray have a funny smell? I.never know whether to use it or not even though I see food blogidts

I really hesitate to use Pam. I rarely use it. I was lazy and did not feel like getting out the brush for the olive oil on the pan and chicken...LOL  

I do not like to use Pam on my cookware. It leaves a sticky coating, even after washing. Imagine what it does to us!

I was not aware it was used by biologists...it does smell wonky....

I had tomato soup and a piece of white bread with peanut butter. I had a tooth pulled today so I have to eat soft foods for a few days. The white bread is soft enough, I personally like the nut and seed bread but can't have that right now. Looking forward to the Chinese food my mom made tonight on Wednesday. Tomorrow night will probably be the "souper" meal she got me. It's like ramen noodles but has veggies and is chicken flavored and you just add hot water like you do with ramen noodles.

I'm making beef stroganoff tonight. So much for all my prepped meals, the element in the oven burnt out yesterday. My husband is going to pick up a new one today but it won't be installed in time for dinner. I need something that can be cooked without an oven and all I could come up with is stroganoff.

Beef strogranoff sounds pretty good to me.

A while back I made some butternut squash with linguine. Well, I still have a couple butternuts left in the basement, so we're having that again tonight. It was really good and it was a nice change of pace. I think having it with a salad with be a good dinner.

Last night was shrimp in a red curry. I have a small pork tenderloin out for tonight. I just put it in a bag with a little olive oil, rosemary, garlic, black pepper and pomegranate balsamic to marinate. We'll see how that comes out. :lol3: I have brussels sprouts to go with it and need to run to the store today for some more vegetables.
