@Stewball, since you've never made pickles I've cut this recipe down to make about a pint.

6 small beets - remove tops, leaving roots and 1-inch stem. Scrub, cover with boiling water and cook until tender. Drain, reserving about 1/3 cup of water. Remove skins. Slice beets.

Combine the cooking liquid, about 3/4 cup white vinegar, 1/2 tablespoon salt. Heat to boiling point, covered. Add sliced beets and 1 medium onion, sliced.

Simmer for 5 minutes.

Put in pint jar, cover. Let cool, refrigerate. Store for about 2 weeks to allow flavor to developed
Two options - eat the beets and onion, then add shelled hard boiled eggs to the pickling liquid. Let sit for a week or so.

OR

Use a quart jar. Add shelled hard boiled eggs to the beets and onion when the pickling liquid is cooled to room temperature. Make sure the pickling liquid covers the eggs, beets, and onion.

Options: make a spiced pickle with a couple of cloves and a small piece of cinnamon stick, some black peppercorns and allspice. If the pickling liquid is too sharp for your taste you can add one or two teaspoons of sugar when preparing the pickling liquid.

Makes a nice hor d'oeuvre, good with cold meats.

Meatballs and spaghetti with a green salad. I made enough for two days, so leftovers for tomorrow's dinner.
:clap: I love leftovers.

I know there is battered fish in the freezer. I just hope there is enough? :cross:
We will have it with oven fries ( not me) and a fresh salad.

This is a favorite, but I don't remember the last time I made it.

My mom probably cooked this a few times a month when I was a kid.  The whole family was into it.  Try it without the French dressing - we never used it and it would cut down on sugar/fat/calories.  I've even made it with fresh apricots in season - oh so good!
Huh! I'll give it a try that way :)

I'm thinking a frittata. Rick says he would kill for a hotdog (it's been ages). We'll see. I don't want to spend a lot of time on dinner as we're going to have a busy night tonight.

I've made this dish in the past too (ages ago) and it is so good but I've never used french dressing, either. I do like to add a finely diced jalapeno or poblano pepper to give it the sweet/spicy combination. Really good if you like spicy stuff. Hot peppers are great for your metabolism, too.

Mrs. Fearnow's brunswick stew. It's canned, but it's so good I can't resist. I'm also doing more overtime today, so I needed something that didn't require much prep. We'll have some bread with garlic butter on the side.

I might try to  make a new pinterest recipe, honey baked chicken. Honey and dijon are the main ingredients I believe. We bought drumsticks at Costco... a "fridge to freezer" pack. 6 packs of 5 drumsticks each, all vacuum-sealed. It was $9 something. For 30 drumsticks! That's a bargain!

We are going out for dinner tonight. It's date night at one of the local churches. They watch your kids from 6-10 pm (9 pm if under 2 years old) for free. We haven't had a dinner alone in a long time so we are going out tonight.
