We had hamburgers, homemade fries and bush's baked beans. I had a cheeseburger without the bun and beans. No fries. And a tomato with salt and pepper. I wasn't feeling too well at dinner so didn't eat much and ate half of a banana. I'm fine now just had a stomach issue going on. We're going to the pizza buffet for lunch tomorrow so dinner will be very light. I can't wait to go I love their salad bar and the pizza is decent! :) I have been craving pizza.

This week, I am cooking from my Healthy Cooking 2013 cookbook all week long. I wrote down my menus and calculated calories for each meal and listed everything on the side of the fridge. Salmon was on sale at the grocery store, so we bought two 6-ounce pieces.

Tonight's menu will be Salmon with Lemon-Dill Butter with Rosemary-Thyme Red Potatoes.

Yum. I love salmon but my husband hates fish so I don't get it often.

I'm making shepherds pie. We haven't had it in a little while.

Pork chops with sauteed apples. Either Herbed Butternut Squash or Smoky Corn Salad, haven't decided which.

Chicken with mushroom gravy. It's a crockpot recipe I found on Pinterest. We made it last night - brown the chicken, add to crockpot, saute mushrooms in butter, add flour, add chicken stock, simmer until thickened. Add gravy to crockpot and cook on high 2 hours or low 4 hours. OMG it smelled soooo good! We had something else for dinner but when I smelled this I wanted a second dinner! lol. We're serving it over rice.

I had put together a turkey and barley soup yesterday in the crockpot, thinking we wouldn't have electricity today and that would be easy to heat. We still have power :cross: so may end up having something else and the soup may get frozen.

Leftover beef fried rice noodles! My mom, aunt, and grandma sent me back to my apartment with several weeks worth of food.

We  have a vet appt tonight for Boo and Pepe at 5:15, so last night I made Meatless Lentil Soup for dinner tonight. We may not get home from the vet until 7:00 or after, so this will be quick to heat.

(shhhh, it's not really meatless because I used some beef broth in place of some of the water)

I'm still not sure. Aaron feels like Thai food and is working from home so we may go to a local place or we may stay home and have soup. He just dialed into a meeting that is going to last a while. I think it will depend on his mood once he is done with the meeting.

Rutabagas and smoked sausage. Cook them like this. Peel the rutabaga and cut into slices. Put in a bowl that has about three tablespoons of oil. Stir them around to coat them and spread in a greased oblong Pyrex dish. Salt and pepper them. Cut the sausage into pieces and split it open. Lay on top of the vegetables. Cover with oil and bake until rutabagas are done, probably about 45 minutes. This is actually an experiment tonight. I have done it before, but with pork chops.

Last night I had salad(romaine, red cabbage, french dressing), faux fish(Gardein brand), and broccoli soup with broccoli, mushrooms, and hot sauce added.  I'll either have that again or butternut squash ravioli with marinara, asparagus, and broccoli or spinach.
