Roasted chicken with brown rice and spinach as sides. Hope to make stock from the leftover chicken after I debone it.
Obviously, you haven't had the pleasure of fresh NJ corn straight from the field!
I cleaned out the veggie drawer and make a chicken stir-fry. It turned out very well, considering some of the unusual ingredients! 
St. Louis-style ribs with a bit of potato salad. No dessert. It's just Rick and me today and that's all I'll have time to make.
I agree! There are nights when our dinner is a frozen pizza because that's all I have time to make.
pork fried rice, and some strawberry jello and some (canned) peach slices for dessert.

Homemade chef salad 
Wagyu beef burgers and caesar salad. The burgers were so good but so bad for you.
Leftover ribs and pasta salad. I will say those ribs were really good. I tried a recipe from Cook's Country Eats Local for Kansas City Sticky Ribs. They were, indeed, very sticky, but they were good.

I am going to sautee' some onions and add a can of corned beef hash. I have some yellow squash and some zucchini. I am going to stir fry that in the skillet with some olive oil. I might bake a pan of corn bread to go with it and have some home cooked applesauce.
I had stuffed pepper soup, green salad, Au Gratin potato, home made applesauce!
