Last night we had apricot chicken. High calorie but very delicious. (It would be lower calorie but it's so good that we like a big serving, see below lol.)  It's also what's for lunch today. 


Tonight we are having chicken taco filling... a crockpot recipe made with chicken breast, black beans, corn, tomatoes w/ chilies, and taco seasoning. We will eat it tonight as a salad, over lettuce with sour cream. It's also really good stuffed into a whole wheat pita.

I'm making pasta using leftover "jambalaya" from when I made a couple weeks ago (minus rice it was a pasta dish). I'm going to make a homemade tomato sauce today to mix with it and add a few more sausages.

I think it's going to be baked eggplant from the garden with homemade sauce with tomatoes from the garden.

Pulled pork. I've got it cooking right now in the crock pot.
Oh, yum! Can I come over for dinner? :D
I had veggie fried rice for lunch.

Edit: Oops, was thinking this was the 'last thing I ate thread.' Guess I was distracted by the pulled pork, lol! For dinner tonight, I am making asian-style salmon, with a sauce made of sesame oil, soy sauce, sriracha, brown sugar and garlic. We always have jasmine rice and garlicky green beans with it.

Edit: Oops, was thinking this was the 'last thing I ate thread.' Guess I was distracted by the pulled pork, lol! For dinner tonight, I am making asian-style salmon, with a sauce made of sesame oil, soy sauce, sriracha, brown sugar and garlic. We always have jasmine rice and garlicky green beans with it.
I'm so hungry and it smells so good. Just about done, we will eat in about 30 minutes.

We  just ordered Chinese, I am so in the mood for it today.  It's called The Four Seasons, it a variety of shrimp, chicken, roast beef and veggies over white rice. Can't wait till it gets here.

Hamburger (no bun),fresh corn off the cob so sweet no butter needed, rosemary/garlic roasted potatoes.

We had pulled pork again (my in laws, mom and sister came for dinner after my daughter's birthday party). We had corn on the cob and fries with it.

I rarely post here because I usually don't have anything interesting.  Kroger had value packs of New York Strip steaks for 5.99 a pound and I splurged, I got 4 steaks for just under $19.  I had one tonight and froze the other three individually.  I have one of those grill pans with the ridges so I get the dark crusty grill marks.  I also got a bag of Simply Potatoes southwest seasoned hash browns.  I cooked some of the hash browns and microwaved a bag of mixed veggies with broccoli, carrots, and cauliflower.  I pigged out tonight on a really good dinner.
