I am making breakfast for dinner.  Starting with a huge salad (we don't give those up even when the rest of dinner is breakfast stuff), gluten-free waffles with maple syrup and homegrown raspberries, eggs with mushrooms and cheese,1 tiny zucchini cake, and Lite Spam (I had a craving, what can I say?).

Boneless and Skinless, I think..

We had fish and fries tonight.
Yeah, boneless, skinless. Sorry. My fingers were moving before my brain caught it.

Not sure about tonight. Rick is asking for tuna and noodles, but I don't have any fresh mushrooms. I could make the casserole without the mushrooms, but it won't be the same. I guess I could make mac and cheese instead. It will be one or the other.

BBQ chicken breast stuffed with sauted onion, mushrooms, rosemary, spinach and lots of mozzarella cheese. Corn on the cob, bbq baked potato with greek yogurt and bacon bits, grilled zucchini boats drizzled with olive oil and Parmesan cheese.

Big salad of mixed spring greens, celery, scallion, cucumber and fresh tomato with probably a blue cheese yogurt dressing. Baked boneless, skinless chicken breast. Leftover piece of a chicken garlic sauce thin crust papa murphy's pizza, boiled zucchini and not sure what else - possibly cheese and a couple of zucchini cakes (tiny, 70 calories each).  Possibly will put a cashew cumin sauce on the baked chicken.

That sounds amazing.

I don't know what I'm making. Probaby spaghetti since I don't know what else to cook and I dont want to turn the oven on.

Sounds like a great dinner!

Sweet & sour pork is our dinner tonight. I have some pork leftover from our pulled pork on Memorial Day. We didn't shred it; I just chopped it into about 1-inch pieces and there's no sauce with it. Threw it into the freezer and got it out last night. This is a very old Betty Crocker recipe, which calls for lots of chunked green peppers, pineapple chunks (and the juice), water chestnuts, etc. I'll make some fried brown rice to serve with it. Rick loves the stuff.

The good thing about using pork that's already been cooked is I don't have that long 2-hour cooking time for all of it. It should be done in about an hour or so. Always good on a week night.

Carpaccio, meat, avocado, fried onions, lettuce + I don't know what else all in a wrap and chips. I was out with my sister, my big sister who is half my size and weight. It came in two pieces. I ate one with the not very good chips and brought the other half home and my ex ate it.

A glass of carbonated water with lemon is all I had tonight. I'm going out for appetizers and drinks for girls night tonight so I will eat something there.
