Well, Monday is Dear Richard's birthday, so we're celebrating today. I have two nice rib-eye steaks in the fridge and we are doing twice-baked potatoes. The very last of the corn on the cob from the garden (I swear we didn't have any left, but Rick found four ears. I think I need a new What's in the Freezer list!). Dessert is a strawberry pie made with berries from the freezer.

I am so grateful for that foodsaver! They say that a foodsaver will keep foods in
great shape for a good two years in the freezer and we have found that to be true.
what's a food saver?

We had hot dogs, potatoes and cheesecake. We had to pick Aimee up from my mom's (she spent the weekend) and that's what my mom made...minus the cheesecake. It was store bought and we brought it.

what's a food saver?
Judy, a food saver is a small appliance that sucks the air out of plastic bags of food. It's to keep the food fresher for a longer period of time in the freezer. Since we freeze a lot, a food saver has really come in handy for us, especially when I'm freezing for long-term storage, better than using regular Ziploc or Hefty freezer bags or a bunch of freezer containers. Since we got the food saver, I've been able to keep foods in our freezer for a longer time without having freezer burn. I think it works quite well.

For short-term storage (less than two months or so), I'll use regular freezer bags. 

Not sure about dinner tonight. Rick is working some OT and won't be home until later. I may get a container of vegetarian vegetable soup out of the freezer.

stewball stewball You'd probably call a food saver a (vacuum) food sealer. They're a great invention. We not only use ours for garden vegetables, but to break down bags of cat food. Mogli eats so little of it that a medium-sized bag lasts forever, so I divide it up into small portions and vacuum-pack them.

We're having leftover roast beef tonight, with some kind of veggies.

that sounds jolly good. I presume you have a proper freezer and I cook so little my fridge freezer is fine
mind you I had one of my sleepless nights again last night so I got up at about 5.30am, didn't feel like reading for a few hours, and I baked a plain warm milk cake which came out light and after I'd washed up all that stuff I made mac and cheese. Haven't tasted that yet. Washed up again. Why didn't I use the dish washer? Then I went back bed and got about 3 hours shut eye. I'm tired and my back hurts. Still it was b productive

Judy, your warm milk cake.....my mom used to a make a hot milk sponge cake. I'm assuming that's the same thing? Her hot milk sponge cake was made in a 13 x 9-inch pan. It was kind of dense, not real light, but it was really good. It's a pretty thin batter, but bakes up well. I have her recipe and I make it often when my sister and BIL come for dinner as it's one of my BIL's favorite cakes. Mom used to frost it with a chocolate icing, so that's what I do, too. 

Tonight we are having spicy shrimp wraps with mango salsa. Mangoes are on sale right now for 50 cents each, so I bought a couple to make salsa. Those shrimp wraps are darn good and we haven't had them in a while. It's basically shrimp and coleslaw in a wrap and topped with the salsa. The salsa is made with the mangoes, some peaches, ketchup, and low-sodium taco seasoning. When I first saw the recipe many years ago, I thought, "Ick." But they are delicious.

I invented an amazing soup (she says, modestly..
).. parsnip, potato and pumpkin, oven baked in a harissa spice blend, then blended with fried onions and garlic in a vegetable stock.

To serve I added a large dollop of pure yoghurt and topped it with Dukkah.

It was so good!

I made it in bundt pan and at 5am I certainly wasn't thinking of icing. I just made a cake that I had all the ingredients for. The inside is reasonably spongey.

Well I started my part time job (to go along with my full time on) this weekend and we have been eating on the run or quick bites between jobs. I cooked Beef Stew in the crock pot Friday for the weekend.

Since I'm off tonight, I think I will cook. Not sure what yet but I'm thinking Mexican. Possible tacos or a taco bake, I haven't cooked that in a long time. I guess I'll see once I get to the grocery store and see what looks good

huh, i'd never thought to vacuum seal small(er) portions of dry cat food. snick and jasper don't get much dry cat food each day either, so i think i'll go ahead and vacuum seal some.  thank you for mentioning this -- great tip!
