I am going to attempt to fry eggplant slices and then, hopefully cover them in marinara sauce and mozzarella.  Notice the words attempt and hopefully.  I like eggplant so I hope it comes out allright. :wavey:
before you fry: salt bothave sides of the slices of eggplant and leave them for about half an hour. It'll bring out the bitter. Then rinse then and dry themy with kitchen paper and carry on. Good luck.

Well then. Today I took me out to eat. I had what was called a 'small' Italian salad, made of all difference veggies and flavours and Parmalat cheese and it came with baked salty bready thing. Jolly nice. Then I had mushroom Alfredo with spaghetti and cheese. Delicious. And two glasses of fresh lemonade. How's that Anne of cats ;-)

Thanks for reminding me.  I guess I knew it, but I forgot about this part!  I think I will fry them tomorrow, it is getting late.  Almost 8pm here.

i used to dip them in seasoned flour and fry them and then make a spicy sauce to cook them in but the kids had usually switched them before I got that far. I salted, peppered and chilli'sauce the flour. Yummy. Good luck with yours.

They're really good grilled. Rick would rather have sweet potatoes than white. He loves twice-baked sweet potatoes, too. I usually make him a twice-baked sweet potato and me a twice-baked white.

I believe sweet potato might be my favorite vegetable too. Whatever we have tonight will have to be easy as I have a busy day and don't have much cooking time.

Well, Monday is Dear Richard's birthday, so we're celebrating today. I have two nice rib-eye steaks in the fridge and we are doing twice-baked potatoes. The very last of the corn on the cob from the garden (I swear we didn't have any left, but Rick found four ears. I think I need a new What's in the Freezer list!). Dessert is a strawberry pie made with berries from the freezer.

I am so grateful for that foodsaver! They say that a foodsaver will keep foods in great shape for a good two years in the freezer and we have found that to be true.

I got up early this morning and cooked pork roast with gray, honeyed sweet potatoes, stir fried cabbage. I took out almost a whole strawberry cake from the freezer. Two couples came over after church,,,,,,,, one brought rolls and cold bean salad, the others brought potato salad and coleslaw. I put biscuits in the oven and served them with apple butter. We had a southern meal, comfort food. :nod: The we played music and sang. It was a wonderful afternoon. Now I am resting here in front of the computer. :clap:
