Right now both kittens are on Science diet. I started using it because that's what my first cat was on at the SPCA and they gave me a bunch of coupons. I switched him to a cheaper kind, I can't remember what it was now. It made litter box clean up smelly, so I figured it wasn't good for him. I have target red cart and right now there are some coupons for Beyond, and iams along with Sheba canned food. Are they good brands?

Sheba is  really good  but I would stay with the pate formulas , the others are too high in carbs ..  Out of the 2 dry you mentioned I would go with Purina Beyond Grain Free  over Iams ..

Mine don't seem to care for canned much either, I will put one can out and now that I have 2 kittens it seems to get eaten faster, but when I had only 1 I felt like I wasted a lot of it. They also like some flavors better than others, but I can't tell of sure what ones yet! They drink tons of water though, so I'm not too worried. I will pick some up tomorrow and start mixing the dry food to get them used to it.

We have a mixture of meow mix and blue buffalo indoor and are trying to switch over to more wet food and just blue buffalo. They say leaving dry food out is not good for cats but we tend to measure it out on a daily basis. 1/2 cup is usually gone by the next day! Cats need at least 30 calories per pound, so if your cat is 10 lbs he needs 300 calories per day. a 3 oz can of fancy feast has 300-400 calories, and we split two cans a day between the two kids of ours and leave a little dry food out for grazing.

I think you mean: 20 kcal per pound.  So, if the target weight is a 10 lb. cat, then ~ 200 kcal per day.  Of course, that's going to be dependent on how active or not a particular cat is.

A 3 oz. (85g) can of Fancy Feast does not have 300-400 kcal. It has ~ 75-90 kcal depending on the one in particular (pate,gravy,chunky,beef/chicken/etc).

I love ordering from doggiefood dot com, because I feed Nature's Variety Limited Ingredient Cans which are pricey in stores where I am.

Example:
Local chain store price at 2.99/can

Doggiefood dot com at 2.55/can (Not including 20% discount!)

So I save sooooo much ordering online..

The site has a many other canned brands at lower prices and you get a nice discount if you're new (17% discount) or order over $120 to get 20% discount. Shipping is free on orders over $49.
