It was the hit of our dinner! Which is good because it was a two-day affair to make. Rick thought it was decadent. I thought his mom was going to purr, she was that happy with it. She took a large chunk home and told my FIL it was hers! I gave my FIL another smaller piece for himself. (My FIL did come down to dinner yesterday. I thanked him for coming and told him I was glad he had dinner with us. And gave him a hug.)

I never made a cheesecake with a spongecake crust. This one had a chocolate spongecake crust, the cheesecake filling, which also included well-drained thawed dark whole cherries. The chocolate top (which wasn't a chocolate mirror;  was looking at the wrong recipe the other day). And then a web of dark chocolate over the whole thing. Served with real whipped cream and one well-drained frozen whole cherry nestled in the whipped cream. Shaved chocolate over all. 

I was supposed to take the remainder of the cheesecake to my sister's tonight for dessert. Well, there's only about a quarter of it left. And Rick said I am taking that to my sister's over his dead body.

There's a recipe for a coconut cheesecake that my MIL wants me to try. Two layers of coconut cake with a big, thick layer of coconut cheesecake in the middle. I told Evelyn that was an incredible waste of good coconut. Rick, OTOH, thinks it's an incredible waste of good cheesecake. I don't think I'll be making that cheesecake any time soon.

That sounds really really good.  I love the Black Forest combination and I haven't met a cheesecake that I didn't like.

No photo....sorry. We were so busy serving it that I didn't even think about a picture.

My mouth is watering - and I'm not usually a sweets lover - but I do love cheesecake and this sounds absolutely amazing! Send some on down here.
