I live in an apartment and we can't really alter anything except painting walls. I can't really think of any areas I could keep our litter box other than our laundry room, which obviously gets noisy. No garage. 2 bedroom, 1 bath.
Also, ideas for what kind of litter to use? I was drawn to pine but I don't know that much about it.

Is it possible to put the litter box in the bathroom? If your bathroom is really tiny for even one person then I guess a litter box would just get in the way. I assume both bedrooms are being used? How about putting the litter box in the living room? You can hide a litter box in one of those special furniture or fake plant things like

There are ways to DIY your own litter box furniture if you don't want to buy one.

A laundry room isn't a great place. A cat can be using the box and be scared by an unexpected noise from the dryer or washing machine. The cat may stop using the litter box after that because it associates the box with the scary noise.

Clumping litter is best since you can remove all the pee and poop easily. Dr. Elsey's brand of litter are good to use and are pretty dust-free. I've never tried pine or other types of litters. There's some info here on different litter choices and one vet's opinion on the best type to use: http://catinfo.org/?link=litterbox

LTS3 LTS3 I really want one of those furniture things but that might be for another day.
I'm thinking the bathroom is my only option at this point. It's kind of small but there is room next to the toilet :/

I have a Rubbermaid tote that I converted to a litterbox and it is in the washroom.  I love the totes because of the high sides - my one female urinates standing up and none of the store bought boxes worked.  The furniture stuff is nice but expensive and I don't like the fact that the cat has to enter a dark hole without any ventilation - in my opinion those things are like Port-A-Potties yuk.   I use Perfect Litter for their litter.

I also use Sterilite storage bins.  The size is just more realistic for my large-ish cats, and the high sides keep them from flinging litter out of the box.  Pet store litter pans are ridiculously small and pricey, and there are likely health implications.  When I switched from the small pan I bought initially, my cats immediately started to pee more often.  One tip:  cut the door on the long side of the box, not the short side.  That way they go in and turn around 90 degrees before they start digging.

I also live in a small apartment, so I hear you about space issues.  I secreted one box in a corner behind the bathroom door, outside the bathroom.  The other is in my living room under a sewing table.  I draped a decorative throw on the table that hangs down and partially covers the box, so it's not at all obvious.  I put furniture pads on the bottom of the box to make it easy to pull out from under the table for scooping.  I also use a small Simple Human lidded trash can to collect "treasures", although if the previous tenant hadn't left me that free can I probably would have bought a litter genie.  The scoop hangs on the side of the box on a hook.

If you use clumping litter, the bathroom is not a good location because the high humidity will affect the clumping function.  If your living room isn't an option you might try a closet or a corner somewhere.  Just keep it out of high traffic areas and away from anything noisy.  I found that the bedroom is not a great place either, because the noise of digging in litter is enough to wake me up.

Are there closets that aren't in use? We keep our litter boxes in a storage room (we're also in a 2 bedroom apartment), but in the past my boyfriend has kept a litter box under a table in the corner of the dining/living area. If you're diligent with cleaning, there won't be any smell.

I find pine to have a strong smell, but have never used a pine litter. We just use clay, so in our case, it can get a bit dusty, which does have an effect on where we decide to put the boxes.

Bathroom is a good idea. I have mine in the bathroom because the floor is easy to clean in case there is some residues.

When I used to live in a first floor one bedroom apartment and had only Charvone, I kept his litterbox right next to the patio doors. That way I could crack open the patio door if he blew up his box, the dumpster was right there, and I could dump the old litter and scrub the whole litter box out on the patio. Now, I live in a three bedroom house that is actually tiny, so I have Charvone's box by the back doors and Sakura's is in the guest bedroom, which we had designated as her room when we first adopted her. I like to put litter boxes in rooms that have some sort of ventilation like windows, or doors to the outside. Sadly, our bathrooms are still way too small to fit any litter boxes in and lack ceiling fans.
