Hey I just purchased the book Raw Fed Cats by Linda Zurich. I am currently in the process of reading it.

I am going out and buying my 12 weeks old kitten some food tonight. Some chicken thighs and hearts. I was going to cut up the chicken thighs into small pieces, crush up the bones with a hammer, sprinkle some salmon oil and taurine on it, and organs.

Do I spread out the 80/10/10 throughout the day breakfast meat, lunch bones, dinner organs

or

Do I try to do it all in one sitting for breakfast 80/10/10, lunch 80/10/10, dinner 80/10/10?

Welcome to The Cat Site.
Do spread it out through the three (or how ever many) meals. Some cats don't particularly like organs, especially liver. So you can feed them when your cat is the hungriest. I personally feed Ritz liver and kidney in the morning.
I also tend to spread organ (around 10%)/bone percentage (around 7% in Ritz' case) throughout a seven day period. It would drive me crazy (OCD issues) if I had to measure tenths of an ounce every day.

I started feeding my cats raw meat when they were young I feed them cube steak I get scared to feed them chicken for the fear of semolina poisoning. I tried Stella chewy and primal but they don't like it.. I am picking up a 3 week old and didn't know if I could feed him raw goats milk not the powder I can't he get frozen at my pet store
