Purina One/Beyond a good step up for skittish cat?

Regent lived at the shelter for about a month and always ate dry kibbles. Since they don't know who dumped him, there's no way to know his diet before then. When we brought him home, were encouraged to get him Cat Chow as a harmless/familiar food choice he would quickly take to. He seems to like it, and he's eating plenty. But, I know it's not the most nutritious thing in the world, so I want to upgrade it. He has had a very traumatic past and is very skittish of any change, so I don't want to confuse him by switching to wet or getting something that tastes totally different.

What are your thoughts on Purina One or Beyond?

You can ADD wet food and let him choose it without depriving him of what is familiar.  Sometimes cats welcome the change to a better food.  Since I do rescue, I do not feed only one food but offer several choices, and different cats have different preferences.  If there's a food nobody will touch, then there's a reason.  Most of them know better than we do.

Beyond looks pretty good, I would go with the White Meat Chicken and Whole Oat Meal Recipe. I would also recommend to start offering him wet sometimes but still give him access to dry, so it doesn't seem forced. I feed Friskies wet.

I would recommend buying new food before you run out of the old, and make a slow transition by adding every day more and more of the new food into the mix.
