What to do with it? It was supposed to be a jackolantern but never got carved. I don't want it to go to waste. I was thinking pumpkin pie, bread, whatever, and even roasting pumpkin seeds. What would you do with it?

pumpkin pie AND seeds! I love pumpkin pie. My grandma used to make it homemade. mmmmm....

If you bake the pumpkin for a hour or more (depending on the size), you can pulverize the pulp in a blender and make your own canned pumpkin. You can use that in pies, breads, or for the furbabies. I freeze 2 cup portions and pull it out when I'm in the mood to bake.

But you need to make the pumpkin seeds! Here's a recipe:

1-2 cups pumpkin seeds, cleaned
1 tbl oil
salt to tast

Place paper towels on a microwave-proof plate. Mix ingredients in a bowl and pour over the paper towels. Cover with more paper towels. Microwave for 2 minutes, stir, cook 2 more minutes, stir. Do this for up to 10 minutes, tasting the seeds after 6 minutes. Stop cooking when they taste right.
