My Brother's Wedding Cake (I made it)

Here is the final cake after it was assembled.

It tasted delicious.  The ratio of cake to icing filling was absolutely perfect!  I used a Swiss Meringue Buttercream to fill and ice the cake and then covered it in fondant. The buttercream was nice and silky and not very sweet at all. Everyone loved it.

I made the sugar roses.

The cake topper is called "First Kiss" and it was part of my gift to them as a keepsake.

The lace and bling ribbon was applied to add some glam to the cake, plus to cover up some imperfections at the bottom of each tier because this was the first time I had applied fondant so it wasn't as smooth as I would have liked.

And I added some ostrich feathers to give it a bit of something "extra".

Everyone seemed to love it, and my brother and his bride were over the moon about it.  That's all that matters! I'm glad that I was able to give them a cake; they weren't going to have one otherwise.

I made the pink roses about 2 weeks go, only to find that the pink faded almost to white within a 24 hour period. I remade the pink roses last weekend, plus the beige ones. There were 5 of each.

I made the fondant icing (for the outer layer) on Tuesday.

I baked the cakes (Vanilla flavour) late Wednesday.   2 - 6" cakes and 2 - 8" cakes.  I  literally finished them around 3 am on Thursday morning.

Thursday evening I torted the cakes into layers and made the Swiss Meringue Buttercream. I filled the layers and did the crumb coat of icing and put the cakes into the fridge over night.

Friday morning I did a final layer of buttercream on the outside and put the cakes back into the fridge.

Friday evening I put the fondant on the outside. Took 3 tries to finally get it applied.  I finished about 11:00 pm.

Someone with more experience and speed and a larger attention span probably could have done it in a day or two, other than the roses that is. There is no getting around having the allow for drying time in between petal layers.

Wow, it looks fantastic! That cake was a lot of work, too, most people wouldn't even attempt a wedding cake. What a nice gift to your brother and his wife, he is fortunate to have such a great sister.

I have to tell you guys a funny story.

My Brother's wife comes from a large family; 14 siblings (some have died).  One of the boys (Dennis) has something mentally wrong with him; not sure what, but he is a wee bit "slow", for lack of a better word. I know he is on some type of medication which could also be affecting his mental acuity.

Anyway, he has a huge, huge appetite, and the first thing he goes for when he goes to my Brother's is whatever food or snacks happen to be out.

Prior to the wedding the only thing that was out was the wedding cake!  So of course when Dennis arrived, the first thing in his line of sight was the cake!  LOL

He made a bee-line right for the cake!!  My Brother told me that he caught him about to stick his finger into it!  He stopped him and told  him that I would kill him if he did that!  Apparently the Minister who was going to perform the ceremony was standing nearby and heard that exchange between Dennis and my Brother and said "I could do the funeral after the wedding!"  

My nephew was there with his girl friend of 4 years.  We were asking when they were going to be getting married.  The Minister also heard that exchange and said that he could have married them today, and then we could have had "Two Weddings and a Funeral" 
  That Minister had a wicked sense of humour!

Absolutely beautiful!  You are very talented!  The cake sounds delicious, and I love butter cream icing. 

BTW, I've bought you a one-way ticket to Pennsylvania, and cleared out the guest room so you can live there permanently. I need a talented person to cook for my parties. 
 Seriously, though--you could do this as a business!

Thanks everyone! It was a real labour of love and not one that I want to have to repeat. Cupcakes are so much faster!  LOL

That cake is pretty.  When I did my one and only wedding cake I just made the roses with royal icing so I could do the whole flower at once.

The cake is gorgeous!  And extra special because it was made by you!!

My wedding cake was made by a friend of my mother's who has known me from the womb.  They were co-workers and pregnant at the same time. She came from a few states away with my cake.  I'll never forget that cake. It meant a lot to me.
