Its not fat!

Recently I tested out adding free feeding dry food to the mostly wet diet I feed my guys. Maybe this was just enough added calories to trigger another growth spurt in my girl. She looks bigger, longer and her weight is up 4 oz in 3 weeks. Is this unusual for a shelter cat? I never expected her to get as large as she is, and now even larger.

I think some breeds keep growing through the first 2-3 years of their life, so it's definitely possible (even if she's not purebred, she may just carry a late-growth gene). I see it's been about a month since you posted this, has she grown some more?

Most dry food is loaded with fillers and other things that cause weight gain for most cats, especially if they are free fed.  Stick with the wet food and use dry food as a "snack" or as treats.
