Did some cooking today

I went grocery shopping today and decided to actually do some cooking and prep for the week. I find that when I get home from work I'm often too tired to cook much, and by the end of the week, I find that I haven't used most of what I bought and have to throw stuff out.

Today I decided to make my sandwiches ahead of time and freeze them.  Lunch meat and mustard on a bun wrapped in foil wrap freezes and thaws very well. It's easy to just grab a wrapped sandwich out of the freezer the night before when I'm prepping my lunch.

I also made some tomato bisque soup which I froze into individual servings for easy lunches.

I always struggle with breakfast during the week. As a result of typically take a Glucerna meal replacement of oatmeal to work.  And when I get tired of that, I end up buying something. So tonight I got a head start on breakfast so that I can have something varied. 

1. Sliced some bagels so they are ready to use.

2. Cooked and froze some sliced bacon so that I can pull some out the night before

3. tomorrow I plan on making some hard boiled eggs

4. tomorrow I plan on making a pot of steel cut oats and freezing it into individual servings; again for easy grabbing. Just add fruit and milk.

Plus I put on a slow cooker of chicken thighs and veggies.  I don't plan on thickening it, but it will be a stew/soup that I will be freezing into servings tomorrow.  So that will be easy to grab for dinners.

Tomorrow I plan on making some taco meat and freezing it into meals so that I can thaw for taco dinners or taco salads.

Breakfasts this week and next will be varied as planned:

1. Steel cut oats with either berries or banana

2. Bagel and cream cheese with tomato slices and fruit

3. Bagel and cream, hard boiled egg and bacon and fruit

4. Raisin bread (not homemade), egg and bacon and fruit

I also want to make some beef barley soup, but I think I'll do that on Wednesday.

Nice! Sounds like you have everything under control for your breakfasts and lunches during the week. You're going to be eating well!

It is surprising how the money spent adds up when buying something at work.  It kind of sneaks up on you because it isn't much at any one time but adding it up over the course of the two weeks between paychecks it is quite a bit.

Rachael Ray has a show about this now. It's called Rachael Ray's Week in a Day. It's various meals that share a lot of ingredients. You prepare everything in one day and freeze or refrigerate it. Then all the meals for the week are prepared to just reheat. I just watched it this morning for the first time. Really good idea, if my freezer wasn't full of frozen raw cat food! Would save money that I waste on using part of something (such as herbs) and then not having a need for what's left before it spoils!

Rachael Ray has a show about this now. It's called Rachael Ray's Week in a Day. It's various meals that share a lot of ingredients. You prepare everything in one day and freeze or refrigerate it.
I've been doing that for decades. I just fell off the wagon on late. So I'm getting back on it.  I can't stand cooking every night. I used to spend a weekend cooking several different meals and freezing them into individual servings.  When I was at the top of my game, I have 3 months of frozen meals in my freezer. Need to get back to doing that; it's so much easier and so much cheaper.
