Whenever one of my cats, Gimli, purrs or gets petted, he starts drooling. Bad enough that it actually drips straight out of his mouth, I've started taking a paper towel along to clean it up. Is this just an odd quirk or could there be an underlying medical condition? It doesn't seem to trouble him at least.

Has he always done it, or is this new?  Will he let you take a look at his teeth to see if anything is wrong?  It's worth a check from the vet, just to be on the safe side. cats hide pain well.  If he is eating w/ no problem/ changes, then he may be fine, but I would want it checked out, just to be on the safe side, or catch anything early.  Especially if this is a new thing.

He only arrived here a week ago, so I really couldn't tell if it's a new thing or not. He was checked over at the shelter and had his teeth cleaned by their vet, so I think they would've spotted any other tooth problems as well. Eating is no problem whatsoever.

My cat started drooling a few weeks ago and we took him to the vet. She checked all around his mouth and teeth for any dental issues and ended up prescribing a low dose of pepcid ac because, combined with other things that were going on, she speculated he may have been getting some acid reflux in his mouth.

The other thing to consider is a thiamine deficiency. I read in a recent article (http://www.thecatsite.com/t/275070/article-re-canned-food-why-not-to-feed-just-one-brand) that some canned cat foods don't have enough thiamine, and drooling is one symptom. Because I've been picking the peas out of the cats' canned food and adding extra water, I decided to supplement thiamine by splitting one Pet Natural calming chew between the two cats once per day.

The drooling has pretty much stopped. I don't know what caused it or what is helping, but I have reduced the pepcid ac dose from two times per day to once per day. But if I were you, I'd get it checked out.

Yes, good advice from AbbyNTim.  Especially if it was just a week ago, I would call the vet that treated him & see if you can bring him in, armed w/ the info above.
Otherwise, the vet may not think to check for those things. Any info,  It all helps.

Keep us posted.
