Well my cat got to my plate which contained just some potato skins and he seemed to really like them. Do you think it would be ok for him to eat just the skin of potatoes?

I have seen where potato skins are not good for cats or dogs, but they were talking about raw ones (I believe) I would stay the course with your cat and only feed pet food and sometimes boiled chicken, maybe a little bit of shredded cheese but not experiment- because most cats are scavengers and will eat almost anything.
