Pineapple Upside Down Cake?

We're going out to dinner with some friends on Saturday, trying a restaurant that just opened up in our area. Then everybody is coming back here for dessert (we never have dessert at the restaurant). And we'll play some games for awhile.

So.....I'm thinking about making a cake, but I don't know what kind of cake I want. I keep looking through my cookbooks, but I haven't really seen anything that trips my trigger and screams "You need to make me!" I don't want something that's really fancy or that's going to take me an a hour to make it. Simple.

Pineapple upside-down cake - It's actually a layer cake with a pineapple filling between the layers, then the pineapple and cherries are on the top of the cake. No frosting or anything because it doesn't need it. I've made it before and it's good. (One time, I made the cake and the top layer with the pineapples and cherries split right in half. So I crumbled the cake, chopped the pineapple and cherries, added some good French vanilla pudding, layered it all together, topped it with the pineapple filling.....and called it trifle. It was delicious! And nobody knew I messed it up and it was supposed to be cake.)

Shoofly cake - An old stand by around here....haven't had a shoofly cake in ages. (My sister usually makes them and she hasn't made it in I don't know how long.)

Apple coffee cake - This is a good cake, made with lots of Grannies, warm coffee, etc. then topped with a mixture of brown sugar and cinnamon and baked. To be served with homemade vanilla ice cream. (I'm leaning toward this one. I love apples.)

Boston cream pie - Gosh, I haven't made one in years. But for some reason, it's in my head and I don't know why.

Peanut butter cheesecake - I hate cheesecake, but I'm in the minority. If I made this, I wouldn't eat any of it, so no calories. That would work.


Which of the five would you eat? I have all the ingredients for any of them. And those are your only options.

I'm probably not much help because I have a really bad sweet tooth.  I think my least favorite would be the shoofly cake.  I have actually only had the shoofly pie.  I do have a sweet tooth but there is such a thing as something being too sweet for me and that's the way the shoofly pie was for me.

Pineapple upside down cake :)

I have attempted to make as good a cake as my original simple one and it always comes out on top, and is considered "screamin" haha.

9x12" pan, line the bottom with dark brown sugar, place pineapple rings on the bottom, cherries in their center if desired, then pour a lemon cake mix on top of that and bake.

Flop it over while still quite warm but not smoking hot, the edges get caramelized and is delish!!

Probably too late, but in the future, try this. I made it for Christmas and I've been ordered that I have to make it every time the family gets together!  I didn't try it because of the cream and cream cheese, but it was a huge it, even with those who said they aren't much into desserts.

Pistachio Pudding Dessert

Pie crust:
1 stick butter
1 cup flour
1 cup chopped walnuts

Layer 1:
1 cup powdered sugar
1 (8oz) cream cheese
1 cup cool whip

Layer 2:
2 regular sized pkgs instant pistachio pudding mix
3 cups milk

Topping:
cool whip
chopped almonds

Mix butter, flour, nuts; press into 9x13 inch pan. Bake 350 for 20 min. Cool. Mix powdered sugar, cream cheese and cool whip; spread on cooled crust. Beat together pudding mix and milk until thick. Spread on cream cheese layer and top with a layer of cool whip and chopped nuts. Refrigerate.

I completely lost out. Rick asked for....well, he didn't even ask, he just told me....peanut butter cheesecake. He said he hasn't had cheesecake in ages. Then I thought about making both the cheesecake and the apple cake (which is just so good), but that's just crazy and then I'd end up eating most of it. Then there we are with two desserts. Not that that's a real problem, but well, no. I'm not going there.

So peanut butter cheesecake it is. 

My sister and BIL loves pistachio anything, so this dessert would be right up their alley, Linda. Copied and pasted!

Catwoman707, I've never made a pineapple upside down cake with lemon cake mix! That sounds interesting. And delicious! Thanks for the idea!

I'm late but I was going to vote for Boston cream or the cheesecake. :)
