Guys, guys.. did you know you can make pancakes in a rice cooker?! I just found the page about it last night, so this morning I tried it. And it is divine. SUPER fluffy. I made a pancake with chocolate chips, white chocolate chips, and some Cookies and Cream bar bits, topped one portion with whipped cream and one portion with syrup.

If you have a rice cooker, try it. It literally becomes a pancake pie. I can't stop raving about it. This is half of the portion I made - the other half is still in the rice cooker for my boyfriend, but I'm sure I could eat it all and die happy. :9:
That's such a cool idea. Saves standing at the stove and flipping.

I had Brazil nuts and almonds.

My reward meal dinner last night (the one meal a day where I eat complex carbs).  I had a big salad of romaine and celery with Litehouse Jalapeno Ranch dressing (I am seriously addicted to this flavor), a grilled chicken breast (boneless, skinless) that I seasoned with a salt free mesquite blend.  1 long skewer of grilled veggies - zucchini, 1 large (really large!) white mushroom and 1/3 cup of sliced red onion, the veggies were brushed with 1 tablespoon of Newman's Own Olive Oil and Vinegar dressing. For dessert I had 2 servings of Dang Toasted Coconut chips and 1 lavender honey drop (friend sent these for Christmas, I finally opened them to try.  Will save for when I have a sore throat, they are good but pure sugar.).  My usual decaf coffee with 1 oz. half and half.

2 servings of Tasty Bite Kashmir Spinach with Paneer cheese, 1 oz. half and half with my decaf coffee.

I had the last piece of pizza from dinner yesterday. I wanted to save it for lunch but I am feeling kind of dizzy and light headed this morning so I wanted to eat something right away to see if it helped.
