I'm going to a party tonight and we are having pizza from Pizza Hut and a lady is bringing Asian lettuce wraps. Cookies for dessert.

She was lovely and we had a great time! The margaritas were delicious. :yummy:  Yum!

Pork chops are on our menu tonight. Not sure how I want to make them. I'm thinking of grilling them with my apple butter bbq sauce that I made last fall....I still have a bit left (I canned it in the pressure canner). Probably with green beans and pickled cabbage.

We are having basa fillets. They were really cheap so I'm guessing they won't be anything like salmon!!!! Like I said. The cats got expensive food this week so the humans are eating cheap!!

I spent $86 on cat food yesterday. Us humans will be eating cheaply this week!! :lol3:
Tonight it's pork chops with three veggies.

Isn't that the truth! Abby is on prescription food and it cost SO much!


We had littlenecks last night. I think tonight is going to be soup from the freezer. Aaron is having a root canal done this afternoon and I am looking for something easy to chew for him.

Those pork chops weren't bad last night. I like that sauce. Too windy to grill outside (again), so I threw them on the indoor grill.

Karen, I hope Aaron's mouth feels OK tonight. Soup is just the thing for dentist appts.

I just found a recipe for Ham Chowder on allrecipes.com. I have a couple cups of chopped ham leftover from making split pea soup the other night, so I was looking for something to do with that. The chowder recipe uses chicken or ham stock (and I froze the ham drippings from Easter, so that should work and I can add chicken stock to make up the difference in measurements), bacon, onions and leeks (and I have a bit of leftover leeks from Easter), potatoes, some carrots and some cream (it calls for heavy cream, but I think I could the rest of my half-and-half). With the chowder, we'll have some leftover Honey Oatmeal rolls from Easter, too....I had thrown them into the freezer. And some leftover pickled cabbage. Quite the combination, eh? 


But it's quick and Rick is bowling early tonight and he's working OT, so this should work out OK. And it helps me get rid of the last of the Easter ingredients.

SO - Larry is off work tomorrow because we have doctor's appointments..... SO you know what that means, right??!! Thursday night margarita specials at our favorite Mexican restaurant. HERE WE COME !!!!!!!!!!!!!! :woohoo:

Tortellini with tomato sauce and Italian sausage.  The down side being it's not home made sauce.  I was saving the sausage for that but I've just not gotten around to it.

Whatever Rick makes (or buys, as the case may be) will be dinner. He's off today as we have an energy guy coming in to look at the house to tell us where our energy bucks are going. He's going to check windows, go into the attic, and go down to the basement. The guy is from our electric company. Hopefully we'll be able to do some things to become more efficient.

Anyway, Rick is off work today, so he's in charge of dinner tonight. As long as I don't have to cook it, I don't care what dinner is.

He took me out for Chinese last night.

Rick is making his famous (family famous, that is) hamburgers on the grill tonight. I am throwing together some crock pot beans and making a wee bit of pasta salad. It's a picnic! 


BTW, Pat, did I ever tell you that I did make your cauliflower salad? It was good! Geez, it pretty much tasted like potato salad; you could it had a different crunch. It's a keeper and I'll be making it again. Thanks so much for the recipe!

Yay...I'm so glad you liked it.  I was a bit nervous that you'd have taken the time and fuss to make it , and then not like it :)  I find it a godsend since both dh and I love potato salad, but like this substitute just fine :)

Pat, I apologize for not posting sooner. We really did like it and I could definitely make it as a substitute for potato salad. I put my own spin on it a little bit. It's really good. Thank you.

Judy, when we went for Chinese, it was at a buffet. I usually stick with a few things. General Tso's chicken (which is never spicy enough to suit me), walnut chicken, pork and mushrooms (which is more mushrooms than pork and that's the way I like it....I dearly love 'shrooms), and a little brown rice. One egg roll with just a wee bit of the sauce drizzled over. And hot tea....always hot tea. That's pretty much it. No dessert.
