Leftovers tonight. There's still a hunk of coconut cake that has my name on it.

We have to attend a visitation at the funeral home this evening. So, I am planning to pull out the remains from yesterday's meal. They are fresh green beans, corn, potato salad, and ham.

Picked up some Cob cakes from Costco last weekend. We had them for dinner tonight. I steamed some vegetables as our side.

What are cob cakes?
Delicious cod fish cakes are made with fresh cod fillets, potatoes, bread crumbs, parsley, Parmesan, garlic, and egg. All mixed together and rolled in the bread crumb mixture to make a ball. They are really yummy. I did not make them though! I bought them already prepared. :lol3:

Mmmm. We have been on a cod kick the past few weeks, instead of our usual salmon. Yum. I might try to make something similar for a little change from the baked cod I have been making.
Tonight, we are having meatloaf, leftover from last night. The new recipe I tried a few weeks ago is still very popular with my husband and this is the fourth time I have made it. Plus, we have Mississippi Mud Cake and Lemon Chiffon Cake left over from Easter at my in-laws for dessert.

Rick is going to his class reunion meeting tonight; they're getting the invitations ready to be mailed tomorrow. It's a dinner thing; they're going to have some pizza and beer while they're working. That leaves me on my own.

I'm going out for margaritas and Mexican with a woman here at work.

Turkey sausages and curly fries. The sausages will be done on the BBQ like everything else lately. I BBQ a lot once it gets warm.

You sound like me. :lol3: In fact, Larry just complained that I spend more on canned cat food than his fish or steak dinners - ounce for ounce. :lol3: Yep - I would go hungry rather than have to change what my kitties eat. :D :heart3:

She was lovely and we had a great time! The margaritas were delicious.
 Yum!

Pork chops are on our menu tonight. Not sure how I want to make them. I'm thinking of grilling them with my apple butter bbq sauce that I made last fall....I still have a bit left (I canned it in the pressure canner). Probably with green beans and pickled cabbage.
