I'll be making Alfredo sauce with lots of mushrooms cream and cheese. I fry the mushrooms in butter. Can't get any healthier than that!!!!

We are going OUT for dinner. Larry is going to Sedona this weekend to help his dad move so he leaves tomorrow. SO - we are going out for Mexican and Margarita's tonight since we won't be going over the weekend!.
I'm so jealous. I loooove Mexican but we don't have a Mexican restaurant here. 

We had quesadillas for dinner. I put chicken, cheese, roasted red peppers and green chili sauce in mine and dipped it in sour cream. It was good, but I am starting to get hungry again.

@catlover19 - My mom has made that crispy cheddar chicken recipe and it's so good! I saw it on facebook and the sauce is really good too even though I don't like gravy type sauces.

I'm pan frying fish fillets with asparagus, cauliflower and broccoli. The fish was frozen and didn't thaw. It's on the bench with a cover over it. I am at the local swimming pool with my kids and I'm hoping that the cats don't get into it. Oh they would have a wonderful feast :lol3:

@catlover19 - My mom has made that crispy cheddar chicken recipe and it's so good! I saw it on facebook and the sauce is really good too even though I don't like gravy type sauces.
My mother in law made it one day when we went there for dinner. She used french onion chip dip to make the sauce and it was really good.

Sure, here you go. No soup here either....we don't like Cream of......anything soup. This makes enough for leftovers, too; Rick usually puts a bowl in the microwave to heat up for a nice Saturday lunch. I would not freeze it.

Tuna And Noodles

12 oz. pkg. egg noodles
1/4 cup butter or margarine
1/2 cup soft bread crumbs
1 stalk celery, chopped
1 medium onion, chopped
1 medium green pepper, chopped
4 oz. sliced mushrooms
1/4 cup flour
1-1/2 cups milk
1 cup extra-sharp Cheddar, grated
12-1/2 oz. can tuna, drained


Cook noodles according to package directions. Drain and toss with 1 tablespoon butter. Spray 13 x 9-inch baking pan with nonstick spray. Arrange noodles in pan. Preheat oven to 375 degrees F.

Melt remaining butter in sauce pan. Combine 1 tablespoon melted butter with bread crumbs and set aside. To remaining butter, add onion, celery, pepper, and mushrooms and sauté 10 minutes. Stir in flour until combined. Cook, stirring, 1 minutes. Stir in milk until smooth. Bring mixture to a boil, stirring. Reduce heat and simmer 4 minutes, stirring occasionally. Stir in cheese and tuna. Spoon into baking pan. Sprinkle with bread crumbs. Bake 30 minutes or until heated through and bubbly. Serve hot.

Note: Open and use 3 small cans of tuna, drained, for this recipe. The can size has been decreased to five ounces now, so it's OK. You can also add more cheese, if you want (I usually do).

OH MY - this looks delicious. Yep - adding this one to my weekly dinner list.

I am on my own for the weekend !!! So that means I can eat what I want, when I want, and where I want. :lol2: For dinner I made myself a greek yogurt parfait filled with cherries, blueberries and blackberries topped with granola and a drizzle of honey. It was like having dessert for dinner. :D

I made roast pork. It was rolled and the middle was mostly fat. I love pork fat but this was ridiculous. It was disappointing. I'm looking forward to breakfast now!!

Yuck. I bought one like that once, it mostly went in the garbage.

We are having stir fry tonight. I took out steaks to BBQ, but it's too windy.

I didn't get to make meatballs tonight, actually I went to an animal shelter and volunteered there all day and had a lot of fun! We just decided to go to checkers

Pork sausages and homemade potato chips with a big fresh salad. We haven't had a salad for a while. We sat outside and it was really lovely.

Spaghetti and sauce (I rarely make meatballs), gluten-free dinner rolls (if they turn out OK), with a bit of coleslaw on the side.
