Mashed potatoes, meatballs, hash browns, corn, stuffing, Caesar salad, Frito salad, cheesecake and trifle. We had a family Christmas dinner today and I sampled a bit of most things. I didn't have any turkey though unfortunately. I avoided it so I didn't upset baby's tummy again.

We still have some stuffing, potatoes and some corn pudding leftover, so I guess that's on the menu for today, not sure what we shall have with it, though. Whatever Dear Richard decides to make will be fine with me.

We have three nice pork chops leftover, too, from the crown roast and I'm going to use them with pork and sauerkraut for our New Year's Day dinner on Thursday.

I think I will make spaghetti and garlic bread tonight. I have ground chicken thawing and will use that instead of beef.

Tonight is New Year's Eve, so we will have our regular NYE dinner, which is The Big Sandwich and some appetizer-type foods later on tonight while watching some movies.

I've made The Big Sandwich now for quite a few years for us. It's a batter bread that goes into a round cake pan to rise and bake. Once it's cooled, I cut it in half horizontally, fill with lettuce, tomatoes, some deli meats, and some sliced cheeses. Wrap in foil and bake til the cheeses melt down and it's all gooey. We only have it once a year, on NYE. Rick's mom gave me the recipe for the batter bread; I think it's originally from Betty Crocker. I started making a sandwich from it years ago, so it went from being called Batter Bread to The Big Sandwich. 


Our appetizers are Louisville Wings (done outside on the grill), a hot crab dip with raw veggies and some crackers for dipping, and some shrimp that I'll season and saute.

Winchester that sounds delish!

This year, NY Eve Dinner will be salmon with pesto sauce, veggies, and an éclair for a special dessert :)

Cream of onion soup for starters.

Broiled rock Cornish game hen, risotto with cardoons, fresh baked bread. California chardonnay.

Homemade fruit cake. Lemon Grand Marnier (Grand Marnier cordon jaune.)
