Rick has been wanting me to try to do some jerky in the food dehydrator, so today is the day.
I started out by slicing the beef (I used a top round) about 1/4-inch thin in strips; I trimmed the meat as best I could. I mixed the cure packet with the spice packet as per the instructions and then added the beef strips and put it all into a freezer bag. Threw it into the fridge for about 6 hours or so.
Then I arranged the cured beef strips on the dehydrator trays. I had a little over 2 pounds of beef strips and used three trays. Here are the strips of beef; they're not dehydrated yet.
It took about five hours for the beef to become jerky. It's leathery and it really does have a good flavor.,,,very smoky. I wouldn't want it around all the time, but it's pretty good. Rick really likes it. After about three hours, I turned the fan off and changed the order of the trays, then turned the fan back on. Oh, and I also stopped the dehydrator 3 times and patted the strips of beef with paper towels a bit to remove some of the drops of oil (again as per the instructions).
A little over 2 pounds of beef strips made not quite a pound of jerky.
