I love to cook and do so quite well so I'm told but baking I don't like but my son wanted cupcakes.
I bought a box of Betty Crocker cake mix, followed instructions only filled them 2/3 full as per instructions. They all overflowed :(
My only thought is that I used Reynolds foil stand alone cupcake liners not cupcake pans.
Now I have some ugly looking cupcakes.
Hopefully they taste good.

I feel for you--I'm not a baker, either.  My attempts are usually edible but not too good looking.

I wonder if something is up as I used BC brownie mix I have used many times before and the 8x8 pan was nearly overflowing and never is!!!  I did nothing different used the same toaster oven, setting and same foil pan.

The brownies tasted fine but were a bit crunchier then normal on top.

I made a pound cake from scratch few years ago..I misread the recipe as ALL I had saved and used in past were the loaf pan...Well this one was a MUCH larger pan.  I had it oozing out and over and I was hysterically laughing and trying to put foil under.  I gave up and recorded it.  It looked like an alien movie.

And guess what my husband said?  That was the best one yet...Sigh...

I learned to not follow the directions when it comes to how much to put into a cupcake insert because size is relevant!  Not all muffin pans are the same size, nor are all cupcake liners.

Until this year I hadn't make cupcakes in years!  After taking cake decorating classes, I started to make them more because I needed things to practice on.  The first time I tried, I didn't get 24 cupcakes because my liners were large.  After that I learned to put a little into each insert, and then go back over each one so that each had the same amount.  I also now use medium liners instead of large ones.

A typical cake mix when mixed with a hand mixer (not a KitchenAid), will yield 24 medium cupcakes.  If you use a KitchenAid, more air gets whipped into the batter, which means you should only fill the inserts about 1/2 full instead of 3/4 full.

I'm sure they'll taste just fine! I've done that when I've used smaller liners.

Dear Richard learned a long time ago that it's not what it looks like that matters; its how it tastes!

They were horrible!
Burned on bottom, heavy and flat on top.
Oh well, guess I'll stick to buying them at the bakery.

Did I ever tell you about the time..,

....I made chocolate cupcakes...filled the tins for the next batch, took a potty break, and came back to find them oddly disheveled? Yelled at brother, and put them in the oven, only to turn around to find our Siamese cat Victoria licking chocolate batter off all four of her paws.....?

That is hilarious!

Oh, do I have a story for you.......I've told this before, so if you've heard it, never mind.

Many years, ago, DS called. He wanted to come home for dinner and he asked me to make my tuna casserole. Ok, no problem.

So I made peanut butter cupcakes with a peanut butter cup in each cup cake. Baked them and set them on a wire rack on the kitchen counter to cool. Opened three cans of tuna and put the tuna in a colander to drain...recipe called for two cans, but I always open an extra can for the cats to share.

Well, Ms. Pepe was sunning herself on the tv (it was one of those console types in a cabinet). I had a crystal basket on a doily on top of the television. When Pepe got up and jumped down, her claw got caught in the doily. Doily and basket hit the heating register and shattered all over the carpet. Checked Pepe's paws for cuts and she was fine. Got the vacuum cleaner out and cleaned everything up.

Went into the kitchen and there was BooBoo, on the kitchen counter, eating the peanut butter cups out of the cupcakes. Peanut butter....and chocolate. Oh crap, chocolate. Called the vet because of the chocolate. So I'm back in the computer room talking to the vet tech on the phone. As I was talking, I walked back out into the kitchen......

To see Banshee with her butt and hind legs on the countertop by the kitchen sink and her front paws in the sink, chumping down on the tuna in the colander. "Oh crap, Banshee what are you doing??? Get your butt out of the sink!" and without thinking, I turned the phone off and put it down so I could get Banshee out of the sink. With the vet tech still on the other end. Shooed the Queen B out of the sink, dumped the tuna out, cleaned the colander out, and drained more tuna. Got Boo away from the cupcakes....again; that boy loves peanut butter. And got it all cleaned up.

Then realized I had hung up on the vet tech. Called her back and she thought the whole thing was hilarious. I was not amused. Found out that BooBoo would be fine, but to keep an eye on him. Banshee would be fine, too, except she might not be hungry for awhile since she had eaten pretty much the whole three cans of tuna....the tech didn't know my Queen very well; she was always hungry.

DS came home, we had dinner and life went on.

OMG.  That's a great story, Winchester!!!

I was thinking of trying to bake a cake for my stepdaughter's birthday party this Saturday but after reading this thread, I'm thinking I'll call the bakery.  LOL  No, it's not because of the thread, really.  I've just never put much time into baking so on the very rare occasion I try it, I don't know what I'm doing.
