Our local grocery store had fresh pineapple on sale with a coupon for 99 cents. Seeing an opportunity, I picked one up. I should have bought several. Really.

I wasn't sure how to cut a pineapple for drying, so I tried to go with chunks as best I could. Some of them were too small; they really dried down.

It took about 12 hours. Halfway through, I switched the order of the trays. (And ate a piece....or two.)

It is so good!

Rick thinks I should try to make my own trail mix.

Oh that looks delicious!  We would eat that up!  DH does make his own trail mix.  Lately I think he is mixing almonds with sea salt, craisins and some dark chocolate morsels.  I'm not sure what else he may be adding.  He has a bottle intended for backpacking that he fills up and stashes in his work cooler or backpack.  He eats on the run this time of year; so he can pour a mouth full and keep going.

Gosh, my BF would LOVE that.  He's a big fan of fresh pineapple.  I've always thought about getting a dehydrator.  Maybe I'll look into it.  We like dried fruit a lot for yogurt especially.

Thanks! I cut some of the pieces too small and I think they got a little too dry. But Rick has been munching on them and he seems happy. I'll definitely dry some again, next time they go on sale.

I found a recipe for pineapple-macadamia nut bars that I may try. It uses dried pineapple.
