It's our anniversary, so we are going out to dinner. Nothing too fancy though. :)

Very little for myself today. Dealing with some stomach issues i think hubby will get leftover spaghetti.

Trying the 3 packet slow cooker roast recipe since it has really good reviews. I'll report tonight how it tastes.

Nothing for me. Dealing with stomach issued. Neighbors just came to the door with barbecue, chicken, coleslaw, potato salad and hush puppies. So hubby will have plenty to eat.

It might be a little salty for some people, but I love this one!
Did you use just meat or did you add vegetables too? It's not salty to me (snuck a bite) and so far I love this incredibly easy recipe! I added carrots, red potatoes, onions, and celery. Probably use a little less water next time.

I am having a late dinner tonight.  I've been procrastinating all day, and just vegging.

I made some ribs in the pressure cooker and am about to go and make some potatoes. I tend to use Idaho instant potatoes instead of making my own mashed potatoes. I hate peeling potatoes and they take so long to cook.  Though, now that I have a new pressure cooker, that might change. It only takes 10 minutes to cook whole potatoes. Of course you still  have to peel the darn things!  LOL

I'm also going to have some veggies.

This is when Iwould like to invite the man that rear-ended me to come over and make my husband dinner. I love to cook but it's been hard for a long time now. If it isn't grilled cheese sandwiches and opening a can of soup it's painful and slow going. BLAH! Sorry...feeling bitter tonight.

I made steak fajitas tonight. Also made refried black beans. Feels like I was in the kitchen for HOURS and even though I took breaks to sit down, my back is killing me. This is when Iwould like to invite the man that rear-ended me to come over and make my husband dinner. I love to cook but it's been hard for a long time now. If it isn't grilled cheese sandwiches and opening a can of soup it's painful and slow going. BLAH! Sorry...feeling bitter tonight.
 I hope you start to feel better.

I think I'm going to get some of that vegetable soup out of the freezer for my dinner tonight.

I have an eggplant from the garden that I will bake with sauce I made from the last of the tomatoes.

I found a recipe that is fairly easy. You dip the eggplant in a beaten egg, then breadcrumbs and bake it at 450 for 10 minutes or so on each side, that's it!

Tell us how it goes! I keep unflavoured breadcrumbs around so I can use them for different things.

The recipe I had just called for the meat, that explains the saltiness. I did love it though. It was really tender and flavorful.

This was dinner tonight: homemade spaghetti sauce, with Zoodles! (If you haven't tried zucchini noodles yet, you're missing out because they are delicious!) I use a spiral slicer to cut my zucchini into " noodles". Then, I sautée them in EVOO with black peppercorn, sea salt, chili powder, and fresh cut dill. They have so much flavor to them, and the sautéing makes them have a terrific al dente crunch to them!

For the sauce I sautée one white onion with one clove of garlic in EVOO, then add in Lean ground sirloin. After everything is browned, i add in the tomatoes I've processed, along with black peppercorn, sea salt, Cajun Season, Chili powder, brown sugar, garlic salt, and Louisiana hot sauce. I simmer everything on low, and add in fresh basil, dill, and parsley. (I use one container of cherry tomatoes and 3 Roma tomatoes and put them in my Ninja to purée them.)

Everything mentioned above is gluten-free

That looks delicious! I don't have a spiral slicer, but I slice my zucchini as thin as I can and use it as a noodle-type food sometimes.

I was able to get three small, but nice zucchini from the garden last night, maybe a little over an inch thick and about four inches long. I'm going to slice and saute them with olive oil and garlic for my dinner tonight. That will be the last of the zucchini for the year.
